This jelly is made from a mulled wine reduced until all the alcohol has evaporated, and then sugar and pectin are added. The taste is of a wonderful wine with a sweetness that is special. It goes well with Brie, or better yet with a semi-hard cheese, like the Pecorinu.

I really love the "elephant ears" we get from the "local" French bakery. So every time I open the box of "mini-palmiers au Beurre" from Maison Fossier, I am reminded how good and snappy a "pastry" can be even when it comes in a box. It crumbles in your mouth; the crunch, the sugar, the buttery goodness is all here.

This very simple puff pastry has many nicknames like, palm leaves, french hearts, schweineohren, and of course, elephant ears. Palmier, or palm tree, is made of puff pastry; layers of alternating dough and butter. Rolled out, coated with sugar, rolled together to the middle to make the "ears", and baked.

The actual origins of the palmier is unclear. The basic concept appeared in many cultures all about the same time. I like to think it is French in origin, and the best are most likely in France where the flour and the butter make for the perfect, classic combination.

These delicious olives are fully flavored with a wonderful taste. I love to bite into these olives; place one in your mouth and bite into the flesh, and the flavor is there! You can feel the texture of the olive, as the oil comes out, in your mouth.

It takes many chews to get it all. It's like having a fine olive oil in a bite! I recommend allocating the olives or you will find the jar empty before you know it!

Château Virant is a family-run business. In the 1950s, they were the first in France to cultivate both olive groves and grape vineyards for commercial production.

The combination of olives and olive oil, along with the first class wine might just be the reason everything they produce is so uniquely special!

Raspberry Flower Honey

I have been thinking about this honey and what to say about it for months. Honey is one of those foods that is often described as amazing. In it's natural state, it lasts many, many lifetimes!

We carry a selected range of honeys and are always looking for more. They all are different from each other and represent a small portion of all the continents. Tasting honey is fun, yet at some point you form a strong opinion about the ones you do like and some you don't.

So, quite frankly, when it came to taste testing a "red raspberry" honey it seemed like it would be less than exciting. Boy, was I wrong! I love this honey!

Now, I wish I could tell you how wonderful this honey is on cheese, or as part of wonderful compote of raspberries, but I can't. What I can tell you is how I like it, it's in my cheap Salada Tea!

If there was a color that could describe the flavor of this honey, this label does it. It's flowery (in a good way), it's sweet (not in a honey way), and it has this complete honey vapor feel. In tea, for me, it compliments, it enhances, and it adds personality.

French Olive Oil

This is the last of 2010 oil. And it is so good!

Full of "color", full of Lucque olive flavor, naturally filtered over time, this oil holds its own over years. Unlike many oils that seem to lose their luster over the year, I have never tasted "weakness" in Chateau Virant, ever. When we dole out the samples at the end of the year, this is one oil I like to take home! Filled with its distinct olive flavor, this French oil has the fruity artichoke hints, the key word hints, never dominates, which makes it a complex oil, without the overpowering, jump in your mouth OLIVE oil that some younger oils have. This is a sophisticated oil that has a dedicated following.
