Italian Orechiette!
Listen to this pasta.
Known as small ears or cat's ears in China, Orecchiette's distinct shape is often spoken about as the thumbprint of the pasta maker.
Whatever the story is, this version from Sgamboro cooks perfectly. With the "meatiness" of the "ear" it cooks through and is easy to eat. Best with vegetable based sauces, like broccoli flowerets, slivered pepper, olive oil and Parmigianno-Reggiano.
Made them yesterday for our annual B-Party for a now 11 year old and they were a hit! Just a rich, thick red sauce on top, a perfect spoonful.
