Is this the new tuna?!

Stored in a glass jar so you can see what’s inside. You can pull the pieces out without them self-destructing like so many canned fishy do. Not too soft and not to firm. This delicate fish is delicious.

Taste wise, these guys are not overly fishy, though they have flavor. Good flavor. Not salty like anchovies, nor overly strong like sardinies. Like a happy marriage of the big three, it's a pretty delicious choice.

Topped on a single cracker it all comes together. As always, as with any Ortiz top notch product, even the oil they put in the jar is special and worth savouring.

This time around there wasn't enough (after all the sampling) to make a mackerel salad sandwich but I'm looking forward to it. With a nice sweet pickle in the mix, along with the mayo, it’s really going to make a great sandwich when springtime finally gets here.

You won't go wrong if you like little swimmers in your life, and these mackerel are a perfect addition to any pantry that's already stocked with sardines and tuna!

Right now the dining room table is covered with over 50 new products to taste.

But don't get too excited!

Unfortunately, out of those 50 maybe three will make it to the shelves. We taste them all and the ones we like get moved to the top of the list. The rest we taste again and again three more times. Just to make sure that we didn't miss something in the first bite. It's funny how the mood of the day has an effect on how the tummy feels, and just about everything else will affect how something might finally taste.

There's a lot of tasting going on. It's definitely not helping me lose weight so I can fit into an old suit for the fundraiser event at the end of the month in LA.

But one has to do what one has to do, and eating lots of food comes with the territory.

So when my son asked me (it's vacation week) to have pancakes for lunch, I was more than happy to oblige, especially considering he wanted to mix-it-up as well. Then the request came for bacon. I didn’t have any readily available so I rooted around in the freezer and found two frozen lumps. One was Rick's applewood smoked bacon and one was barbecue pork from my cousin in Vermont, from a long time ago. I am pretty confident that it’s from a Mangalitsa. Even with a little freezer burn, the bacon was fabulous.

With the little bit of batter left I made one pancake, made two fried eggs in the bacon fat, a couple of slices of barbecue pork. Now that's good! So much for my diet.

The take away from all this is why foods, like Rick’s bacon, make it to the list, because they withstand real living. Even when freezer burned past it's prime, it’s still awesomely good! Taste testing works.

Like all marmalades they really do well with cheese, on top of a scone, or just plain on a spoon. This one, made with Yuzu, is really good on a spoon, and works really well with a nice pork!

Yuzu is the citrus golden child of the culinary world today. It is popular as a sour, citrusy ingredient - especially Yuzu juice as an addition to mixed drinks. There seems to be a zillion versions that are showing up everywhere, some are so salty you can't even taste the citrus ...

Yuzu's origins are from China, but the most popular products are coming from Japan these days. This marmalade is a great example - it's really tasty with a very nice sweet/sour flavor. If you like grapefruit marmalade, then this Yuzu Marmalade is for you!
