It has been a pretty sweet year, especially this holiday!

We had a lot of sweets to choose from this year. There is so much sweet stuff we had to stuff it in all the nooks & crannies amongst the savory.

It turns out that not everyone is a sweet person, some are just savory. And the "savories" felt a little sad surrounded by all that sugar... so this year we separated sweet and savory from each other (not the people, the products), put them into two separate categories. Stocking Stuffers and A Chef's Stocking Stuffer.

Colline di Santa Cruz Olio Nuovo

The first whiff of the bottle and it's almost as if there's nothing there. It's very light and barely hints of what's to come.

In the spoon the color has greenery, with hints of shades of darkness on the edges.

The first taste starts on the lips and on the tip of the tongue. It is incredibly buttery as if the butter is so thick that your tongue and your lips can't meet.

Next, the oil moves to the back of your mouth cavity. It's almost as if the flavor floats within the mouth across the top of the tongue without touching.

As the oil floats towards your throat a touch of bitterness touches down on the edges of your tongue. It’s a wide feel, not a sharp edge which is more typical this time of year. I have never felt this before.

As you're feeling the bitterness build as it moves to the back, high up in the throat a large vapor cloud gathers. It, in turn, turns sharp and turns into a cough and a tickle. That tickle is way down at the back, feeling like it is way past the throat. It feels as if the pang is resting on your clavicle.

The first taste for me is usually a small sip that I spread in my mouth and my tongue and lips to get an overall feel, not a big gulp. This oil was so interesting and had so many elements that I was cautious. It's a sophisticated complex oil, yet has very simple elements.

It is my favorite oil this year!

* Katz December New Oil Katz December's New Oil

Open the bottle and you never know what you're going to get in the nose. That very first whiff that is contained in the sealed bottle is waiting to jump out with the smells of a new oil for the 2016 harvest.

You really only get one chance and so take a big draw to get it all in. Your nose fills with the classic olive oil smell. What’s different is on the edges of the inside of the nose there is a tingle as everything moves around and hints at what is about to come

In the spoon the color this year is more yellow than what I would expect from Katz.

The smell from the spoon is hard to describe. It's not like you would expect as there are more subtle molecules that are hinting of artichoke and something green. It’s very light in presence, a reflection of the color, yet even with its subtle feel it’s very enticing.

The first swig is very buttery. As it swishes around in the mouth the flavor stays very full, and to the lips it definitely has a buttery feel. There is very little bitter edge on the tongue, a departure for this oil from its norm. It has a full olive feel. It's not exactly light but it is overwhelmingly soft. I like that!

Predominately olivey artichoke there are many nuances of other things, perhaps almond shells. That's not exactly correct but I don't know how to describe it. What a fun oil.

It's so soft and round, the flavor goes and encircles, even the underside of, the tongue. That's an incredibly unique occurrence!

An don't be surprised when the oil with all its butteriness and hints of vegetables stops, and before it gets to the back of the tongue and you think it's done, your throat explodes and the cough ensues. What a great peppery finish!!

It is my favorite oil this year!

Tiburtini olio Novello

When you first open the bottle the aroma, like perfume, arises from the bottle; a soft, gentle olive oil smell. It is light and airy to the nose.

In the spoon, to the eye, it is the greenest, murky, glorious color of a new oil. The cloudiness excites you, creating great anticipation for the vibrant flavors you're about to taste.

The first mouthful is not what you expect. Your taste buds tell you, you can almost feel the cirrus clouds of the floating crushed olives. The oil you taste is a buttery olive. Artichoke and asparagus are the hints that sit inside this flavor profile.

As it rolls to the back of the mouth, that's exactly how it feels, like it's rolling smoothly to the back of the throat and then down. The first spoonful had no peppery kick, no tickle. The second spoon and I was coughing, not in the hot, kind of peppery way, but just in the way of a good tickle.

There is no racing with this oil, its just calm as it floats like a cloud as it passes through your senses of your inner being. It is distinctly Tiburtini.

It is my favorite oil this year!

If you live east of the Mississippi River it takes 7-8 days (shippers don't count the weekends in how long it takes) to get to you. And if a big storm comes you will need the extra travel time for delivery before the 25th. Unlike Santa, who delivers straight to your tree early in the morning of the 25th, UPS stops Christmas eve.
