Diet plan 2020 January
and the Fancy Food Show
This is an update as to where we are at with the New Year’s diet. Simply, we are nowhere. I have plans, dishes, ideas, and what ingredients will be interesting, just not yet implemented. We salivate for interesting foods that makes us healthy. They will be forthcoming.

We are here this weekend at the Fancy Food Show in San Francisco to look for great new ingredients and to say hello to old food friends and meet new ones. Finding people who make great food at these events means eating lots of (wildly varied) foods. Not so great timing for the diet.

The food trends (published, not ours) that are coming for 2020 include fast food breakfast, not-round pizza made at home, fasting diets, meat that is not, unusual new colors from plants to change the look of food, and sheet pan foods like cakes and brownies.

It will be interesting to see what is new at the show and it is always interesting to see which foods or ingredient are the most popular. Countries show up with sections and aisles of producers that have wonderful food and often no way of importing into the US. Total bummer.

The key here to survival (my stomach) is to limit eye contact as all the vendors want you to try their samples and it is rude to refuse the offer. Imagine eating sugar, savory, oils, unknown fish all within 100 steps! It is best to be on your best behavior and keep your lips tight!

In the food halls, as far as the eye can see, foods of all kinds are to be seen, we are hoping for great finds!

Show special - for Italian Pianogrillo Olive oil!

Edible Organic Moroccan Pink Rose Buds
"Rosebud!"
Stop and eat the Rose (buds)

The rose is one popular herb! Perhaps not here in the Northwest, but to 100’s of millions in other parts of the world, it is part of the regular garnish.

To be clear, the roses you get for your birthday from the local florist are not the ones to eat. Those have been grown and sprayed with chemicals. If you grow your own, without fertilizers and they smell great, chances are they will taste great, too.

Rosebuds, not to be confused with Rose Petals, are used a bit differently. Think Rosebud Tea. (6 grams of Rosebuds steeped with lemon verbena for 8 minutes, add honey to taste). There is some belief that the rose can heal and help your physical heart.

It is common knowledge and proven that the emotional heart can be elevated with just one of them.

Of course, you can mix gin, vermouth, elderflower, rose water, shaken not stirred, and topped with a rosebud in a martini glass. It’s another way to elevate one’s spirits.

To finish the day, make Rosebud Milk Tea. Add 1/2 cup hot milk and 1/2 cup hot water to loose leaf rose tea with sugar or honey, topping with a few buds. Luxurious! Time for a snooze!

Hawkshead Mulled Damson and Port Jam
Relish Mulled Damson
and Port Jam
To the nose it features a tang and a bit of tingle. I recognize the notes, the "smell", but I can't put my tongue on it....

To the buds it is lip sucking, tongue smacking fun. The cinnamon is just right, giving the overall feel a nice twinge and the citrus gives a nice overall upper cheek twang! It is smooth with little chunkies of citrus peel!

Even though it is for a good piece of toast or a deconstructed PB&J, you could easily eat the whole jar with just a spoon! It is that good! It just might be one of the all time faves!

A damson is a fruit with an English name, small and a deep, dark purple, like a plum. Damsons are all over Europe, though the damson is native to Great Britain.

Port is a wine that was aged in Oak barrels and fortified with local brandy to keep from spoiling during transport from Portugal in the 18th century. This added alcohol stopped the fermentation process, leaving more residual sugars and thus creating a sweet wine. Made and stored this way until 1986.

Add lemons and oranges and a wonderful jam is produced!

Les Ruchers de Bourgogne Maritime Lavender Honey

Maritime Lavender Honey
lavender honey on steroids

There are over 45 different species and over 450 varieties of lavender. And the species in France produce some of the finest honey of its kind in the world.

Location matters as well, the land, the air, the weather, all contribute to the honey. We have had lavender honey from all over the world and all are very different!

This maritime lavender is my all time favorite of all Lavender honeys.

This honey is from pollen gathered from lavender planted along the shores of the Mediterranean. As a result, Maritime Lavender honey has a slight saltiness that enhances the overall flavor. Like lavender honey on steroids.

Organic Hidatsa Shield Figure beans garden treasures
This might be
my favorite bean!

Deep in the Missouri River Valley of North Dakota the Hidatsa Indians grow this pole type drying bean in their corn fields. This Shield Figure varietal is a farm favorite. These beans are creamy and on the larger side - so are multi-purpose. Tan and white, they are simply gorgeous.

Cocktail Punk Cherry Bitters
Cherry Bitters
from Cocktail Punk

A cherry bomb, targeted directly at (your) Manhattan. Vibrant cherry, a hint of vanilla, and subtle spice complements the oak flavors in dark spirits, but the flavor profile is simple enough to use wherever a touch of cherry is needed. You'll never need a bar spoon of syrup from the Luxardo jar again.

These cherry bitters are the bomb! Adds that cherry essence without the cherry -- although, who doesn't want the cherry, too?

French Candied Orange Peel
Candied Orange
Peel from France

These delicious French candied orange peels are neither too sweet nor too stiff, and they're perfect for a whole host of applications.

Use them as-is to dip in your favorite dark chocolate couverture for a wonderful treat to serve with after-dinner coffee. Or you can dice them up and use them in an array of baked goods and confections, from cookies and cakes to puddings and tarts.

They have a classic, bitter orange flavor, and are nicely coated with inverted sugar, so they don't stick together.

These are the easiest candied peel to eat out-of-hand, not sticky and a good bite.

Heilala Bourbon Vanilla Extract 2x

No chemicals or nasty synthetic imitations here. Only the best organic vanilla beans are used before Heilala's cold extraction and unique aging process takes place, resulting in a true vanilla aroma and the purest taste imaginable.

This versatile bourbon bean vanilla extract is perfect for all your baking needs or whenever a recipe calls for vanilla extract or essence. Parmigiano-Reggiano Winter milk Cheese
Winter Milk Parmigiano-Reggiano
Cutting in February

This Parmigiano-Reggiano cheese is aged over 26 months and is a very special treat, so place your order now to reserve your wedge.

We sell out of our specially selected wheels of cheese quickly. This year's cheese comes from a farm located near the small village at the base of the Apennine Mountains.

It is one of the mountain cheese houses. The milk for their cheese production comes from 15 different local dairies, all located within 30 kilometers of the cheese house.

The owner of the cheese house, Giovanni, says that the cows from which the milk is harvested are 50% Bruna Alpina cows, and 50% Frisona -- with a few Vacche Rossa and Montbeillards thrown in. The average life span of the cows is 8-10 years, which is a good indication that the cows are not pushed for maximum milk production. All reflecting well on the final results.

This Week's Recipes

Black Bean Chili Recipe

We sell a lot of beans. And, we also sell a lot of chocolate. Although we do not often think about chocolate as a savory food, we love to find savory applications for it. Not only does it add greatly to the favor of the dish, but it makes the dish even more healthful -- not to mention interesting.

Risotto with Red Cabbage and Pancetta Recipe

A wonderful, cold-weather risotto that has its roots in the Venetian practice of cooking shredded Savoy and other cabbages very slowly in olive oil, garlic and pork fat. This recipe courtesy of Marcella Hazan and her wonderful cookbook, Marcella Cucina (Harper Collins, 1997).

Cranberry and Lemon Florentines Recipe

A lacy, crispy cookie.
