Bona Furtuna Organic Tomatoes
Marinara Sauce and with Oregano Flowers
These two Marinara's are made from an indigenous heirloom ancient variety of tomato called Corleonese, a variety grown for over 350 years in the Palermo Province area of Sicily. These hand picked tomatoes are a round tomato with multiple ribs.
Bona Furtuna is the only commercial producer of this tomato in the world and it is pretty gosh darn tasty!
This native plant naturally grows in the long, hot summer months in Sicily, giving the tomato a wonderful, fresh flavor and perfect acidity. It is this tang of flavor that makes these tomatoes special and different than all others.
Original Marinara
When you open the original marinara, to the nose it smells like a crushed tomato. To the mouth, the first thing you notice is how smooth it is. It’s smooth with just a little bit of tickle and then it disappears in a wonderful fade of flavor.
On the first bite a memory comes back, it tastes like a V-8 juice, just way, way better. It’s delicious!
On subsequent spoonfuls the taste is very delicious, like a liquid tomato. With just 2 ingredients, tomato and Trapani sea salt, it is pure.
The best thing about the taste is that it finishes sweetly, tomatoey and super clean.
So many tomato products end with some unknown flavor of bitter, sharp, tang, and never in a good way.
I never imagined I would say a tomato sauce would taste this good! It’s good enough to eat with a spoon

Oregano Flowers Marinara
To the nose, it absolutely wafts sweet oregano. You smell oregano at the front with a delicious background of tomato.
To the taste, there is a base layer of tomato across the tongue into the back and the oregano flowers are up high on the upper sides of the cheeks above the teeth and at the back of the throat. Together they make a wonderful, harmonious flavor.
At the forefront of the taste it is wonderfully oregano. With a vehicle of tomato. Think pasta, of course, but also a base for a flatbread quickie. Tortillas with a swirl of sauce, cheese sprinkled and bell peppers in the toaster oven.

Three Cans from Italy
with the berry of the plant Solanum lycopersicum.
At some point in time I started making a classic red sauce for pasta. It was cheap to make, easy, and could include lots and lots of pasta to make a filling meal for the day.
That was college and now is now. In between then and now came a little income affording additional ingredients. In an effort to get more calories into the tykes and to expand their flavor taste buds, the sauce went from a topping for pasta to an almost stand alone dish.
Start with diced onions in a good dutch oven and tiny bit of olive oil.
Cook until transparent, then transfer to a bowl. Cook about a pound of hamburger that has been salted and peppered and separated with a potato masher, until well cooked with some crispy bits, if you can.
Then add the onion back in, toss and keep cooking.
While cooking the meat and onions, mince or smash a whole head of garlic, dice 2 to 3 bell peppers (of varying colors), and slice 10 mushrooms.
Add the garlic and peppers to the sauce and toss to intertwine. Add 2 cans of tomatoes and stir. Find the ones you like, it really makes a difference. Use water to get the remaining tomato off the walls of the cans and add to the pot. Add the mushrooms. Add a spoonful of sugar and or maple syrup (please use the real stuff).
Lower to an aggressive medium bubble for 15 minutes and then simmer covered for at least 30 minutes; the longer you cook it, the better to reduce the liquid and to concentrate the flavors.
Works fabulously on pasta, rice and as a standalone in a bowl in the middle of the night!
Omit the hamburger if you must and the mushrooms if you so desire.

Three Bean Chili
Easy Recipe
We got beans! So, we made baked beans last week and tonight we made chili. Well, at least our version of chili. Going to the store is not really something we are doing right now. (And we have a really big pantry (the shop) for most everything). So we took a sweet onion, a head of garlic, 3 sweet bell peppers, Muscovado Sugar, Mehdi's Harissa, cinnamon, cumin, cilantro, ground turmeric and a pound of mixed beans.
The beauty of chili, or at least this chili, is that precise measurement is not critical. It is a more or less measurement depending on what you like and don't like when it comes to the spices. Like it hot? Add more of the Harissa (though the Harissa is more flavor than heat, add pepper flakes for true heat), the cinnamon doesn't make it taste like cinnamon, the cinnamon instead brings out all the flavors. Add cocoa powder to get an enriched feel.

Beans on Toast

Look, I know Louise, you don’t like beans, but they really are a good thing to have. Travel across the pond for Beans on Toast.
From a can of any beans, (dress it up to make it your own by adding a diced onion, minced garlic, maple syrup or muscovado sugar – any sweetener of your choice really). Add Col Pabst Malt Amber-Lager Worcestershire sauce, Katz Apple Cider Vinegar, tomato sauce. No need to measure, you will know if you need more or added too much. Heat in a pan, stir it all for a short bunch of time and then place a couple of spoonfuls on toast. Dress it up with something pretty like a Peep.

Desert Miracle
Moroccan Olive Oil
Wonderful lightness, filling the mouth with the feel of the Arbequina olive. Desert Miracle olive oil is a sweet oil, with a light, almost hidden burn in the back of the throat. Its character of Spain is present with a bit of fruitiness.
From the pressing of the best Arbequina and Dahbia olives, we get this golden olive oil verging to green, with a well-balanced taste and complex profile. Harvested at the end of September-beginning of October, just when the olives are changing colors from green to black and are still rosy.
The fruitiness of ripe olives is clearly identifiable in the nose and mouth with a great diversity of secondary aromas, above all apple and banana. Desert Miracle olive oil also has hints of other ripe fruit such as almonds, tomato, fennel and artichoke.
On the palette it reminds of almonds, its sweetness stands out a little, as well as its astringency that does not interfere with its profile. The result is a very well balanced and harmonious organic olive oil with a clear touch of sweetness—a characteristic of the variety.
