The Meaning of Chai
The word Chai
means “life”, alive, living, and as far back as medieval Spain, the symbol (of life) was worn as an amulet.
In
France, Chai (pronounced shay) means a wine “shed” or place to store wine above ground.
In India, Chai, \chi\ derived from
Chá (Chinese and others), means tea. And in Indian cooking, the word Masala means spice mixture made into a paste or powder, such as chicken masala. Thus Masala Chai is a spiced dark tea.
Jaipur Avenue Masala Chai is more than the blending of the ingredients; it is not just a random mix. In fact, it is about finding perfect harmony to create the smooth balance that makes this a very special, calming, blissful chai.
The creation of
Jaipur Avenue Chai started with an expat from
Mumbai, India who was an accomplished textile designer for Oscar de La Renta in NYC, and missed the Chai from “home”. Now a Seattle resident, Jillu found it harder and harder to find the time to make Chai.
When she found out that her husband’s high school friend had created an all-natural, instant, just-as-good as the freshly brewed homemade chai, she quit her job at
Nordstrom and started Jaipur Avenue.
This year in our shop during the holidays we shared and sampled all of her flavors and with total eye-closing rave reviews!
The aromatic spices chosen are not random and according to
Ayurveda, the 5,000 year old system of natural healing; the spices chosen have purpose and are rich in antioxidants with health benefits. Like all foods, the origins are as important as the taste themselves!

Toasted Corn
Corn Nuts - but better!
It's Awesome Toasted Corn!
Having consumed our fair share of “bagged” “corn nuts” of the overly giant sized kernels, we were intrigued. You know the old saying ,“bigger is better”, is more fun to say than it is in practice!
When it comes to taste, flavor and crunch, these little, normal sized corn kernels are da bomb! Crunchy thru and thru, each one crunches just right. Eat one at a time and you will get 11 crunches (of biting) before you are done. Depending on your crunch speed about 6 seconds of time!
With three flavors, Toasted Corn, Spicy Toasted Corn, and Salt and Pepper Toasted Corn, there is something corny here for everyone (see below)!
Starting with non-GMO corn kernels, the just plain “Toasted” version is my favorite. A little oil and salt and it is perfect in every possible way! I thought bigger kernels were better but not anymore. It’s hard to exclaim exactly why we love these so much, but they are the perfect munch food. For desk or a long car ride, they are the just right grab and bite snack treat.
Toasted corn is exactly that, corn kernel un-popped, un-boiled, but toasted and most often oiled and salted.
CornNuts (Kraft Foods), Cornick (Phillipines), Diana (El Salvador), Cancha (Peru, Equador) are all variations of a Corn Kernel that is “toasted”. The base variation is seasoned with oil and salt. Garlic, chili cheese, adobo, BBQ, ranch, etc. are some of the many flavor variations available today.
The Toasted Corn was first introduced here in the US by Albert Holloway in Oakland, California in 1936. Originally sold as a free Tavern snack food (in 1900 there was an estimated 265,000 legal and illegal Taverns) it later became the CornNuts with a hybrid of the Cuzco corn from Cusco, Peru being grown in California. In 1998, Nabisco purchased the business.

Easy Baked Bean Recipe
Cook all day on the Stovetop!
Imagine filling your home with the smells of cooking beans all day long. And as dinnertime approaches the smells intensify! It is pretty wonderful!
Making beans in the oven or on the stovetop is so incredibly easy! Making this recipe is literally putting the ingredients into a pot and putting it on the stove top. Get creative and dice the onion if you want to get fancy.
This recipe says bake it, though recently I have been making baked beans on the stovetop. Mostly because our oven is broken and I have been to busy (lazy) to take it apart and fix it.
And, because my garlic supply has run out (anxiously awaiting the new crop of hardneck), I have been using our Organic Garlic Powder as it is a touch easier and more than does the job.
As an option for bacon, I like using sausages from different places. Polish, Chorizo, Bratwurst, Chinese (which I like a lot because they have a ton of oil) or a locally made hot dog works, too.
If you're like me you won't be able to keep from stirring it every time you're in the kitchen! And if you forget something, like the mustard or the real maple syrup, you can add it anytime in the day. Really you can put the beans in the pot in the morning and go shopping for the rest of the ingredients. With a pot'o'beans there is no such thing as too long!
This versatile food goes side by side with rice for one dish. On top for another meal. By itself as it thickens, top it with a little ham, or freshly cut corn off the cob. Baked beans are simple, easy, tasty, and smell great when cooking!

Organic Red Rosita
Beans - perfect for baked beans!
Grown to the north of us...this bean is relatively small and leans towards purple red in color.
Delicate and works pretty gosh darn good in baked beans. (It's the bean I am using right now while I check the recipe.) The rice is ready and after sampling for the last couple of hours I am ready to chow down!

Ortiz Bonito Del Norte Tuna Tin
This can of Ortiz Benito del Norte tuna is the perfect size for lunch! We love the shape of the can, which fits easily in the palm of your hand. Opening it reminds us of those romantic (fantasy or real) wicker basket picnics in a green field in your locale of choice.

Bonito Del Norte (White Tuna) is a homemade specialty of Ortiz. These are authentic Spanish white tuna; they appear annually in the waters of the Bay of Biscay in the Cantabrian Sea.
The Bonito del Norte is the most prized of the tuna family, appreciated for its pure white flesh, delicate texture and superb taste. Line caught, and within a 24-hour period of being caught, large chunks of delicious fish are cooked in seawater and the loins are hand-packed in quality olive oil to preserve the tuna's highly prized flavor, and left to mature in the can for at least three months.
This aging process helps ensure that the product is moist and delicious when finally opened.

Brown Pardina Lentils
Brown lentils are one of earth's first domesticated crops, and are still one of the most widely used pulse in existence. They have a relatively short planting and harvesting time and can grow well, even in poor soil. They are easily dried and stored for long periods of time, and are quick to prepare.
Pardina lentils are a "cinchy" way to add fiber and protein to your diet without adding fat or calories. Their hearty flavor goes a long way to satisfy your "meat tooth," so if you're looking for a way to a) go veggie or eat less meat, b) improve your diet dramatically, c) eat well for less money or d) dine your way to happiness, wealth and beauty, you can't find a better dish for yourself than a heaping helping of lentils.
I'm always astonished at how deeply satisfying and rich a simple lentil soup or salad can be. All it takes is just a little bit of seasoning from a squeeze of lemon, some freshly ground black pepper, and a pinch of sea salt to make Pardina lentils sing.
For me, brown lentils recall a younger day of macrobiotic dinners eaten with brown rice and steamed zucchini, all soaked with lots of home-brewed tamari. If that's your thing, bravo; you're probably already a big "lentilhead". What's amazing to me is how they also occupy a space at the other end of the table. Brown lentils are not only easy, they're elegant. Lentils can be braised with duck fat and demi-glace, pureed with parsnips and deep-fried into croquettes, or pressed together with roasted mushrooms and walnuts for pate. Yes, you can have your lentils and relish them, too...no wheat grass juice required.
Lentil lovers in Spain go crazy for these because they're the most flavorful lentils around. Grown on the Palouse, these quick-cooking Pardina lentils "muddy" the water, but maintain their shape and taste out-of-this-world delicious.

To the nose you get the feeling that there is no wafting here. There is an aggressive jump up into your nostrils as you smell cardamom, turmeric and hot peppers. This is followed by a feel of citrus that turns into acid.
Leave the cover off and the acidic volatiles leave and what remains is the cardamom, turmeric and the hint of pepper. There is also the nose of pickling.
There is a tinge of excitement for the mouth, not knowing what is going to happen! There are three main groups here. The initial whole mouth texture which is the mango and is the underlying taste, though you would be hard pressed to exclaim I taste mango!
Then there is the “sauce” which is smooth like a nice thick syrup, and it contains all the flavors.
There is the sweetness of the mango and sugar, and there is the sour sweet of the lemon and lime, and there is the melding of all the spices. It’s pretty tasty!
With a mouthful, it is a lot to take in. There is a sour element that can make your eyes close, but only for a brief moment. The mango is in little pieces that are soft and disappears quickly. The little pieces of red pepper are (not hot) interlopers of bits of chewy, perhaps the only thing that doesn’t feel like it dissolves on its own.
Overall though it is a combination of everything into one. In use you would never view it as separate elements, only as one glorious flavor.
It’s all the complexity of all the flavors that makes it tongue smacking good!

Raw Tomato Sauce Recipe
This is a perfect way to use some of those extra tomatoes coming our of the garden. Fresh, quick and easy -- and perfect with long pasta after a long, hot summer day.
Summer Farro Salad Recipe
This has got to be one of the simplest recipes you can make. Because it's so simple, the quality and flavor of the ingredients - especially the vinegar and olive oil - are more important. Select a good-flavored artisan vinegar and a tasty Tuscan or Sicilian olive oil, and you can't go wrong.
This salad is a twist on a classic Italian recipe, with added color as homage to summer. Add small cubes of feta cheese or tuna or white beans to give it a protein and filling boost if you like. It makes a wonderful side dish served hot or cold, or prepare it in advance and take it on your next picnic as a healthy and tasty alternative to potato salad. Also perfect as leftovers, as the flavors blend so nicely after it sits in the fridge overnight. In fact, this recipe is so good the next day, I always make the full recipe no matter how many I am serving - just so I can have leftovers.
