India Tree Dorada Popcorn
Popcorn is the best diet food
Popcorn is way more than a movie treat or a kid's snack!

Those little kernels that are yellow-orange, hard and grow a magical 20 to 50 times their original size when the hull ruptures and pops.

Not all corn is the same, not all corn can be popped (which doesn’t make sense to me), and the largest state to grow popcorn is not Ohio, but Nebraska.

Nebraska grows 353.7 million pounds of Zea mays everta, a cool way of saying popcorn. This is 44% of the nation's crop of popcorn.

Not to be confused with Iowa which grows the most corn, on an amazing 13.5 million acres which produces 2.296 billion bushels of corn! Which is 16.19% of total US production.

Olivia, a town of 2,500 people, has designated itself as the Corn Capital of the World as of 1973, though it is in Minnesota, which is only the 6th largest producing corn state. Hmmm. It is important to note that Olivia does have the largest known statue of an erected ear of corn.

Corn to be popped, or better known as popcorn, even before it is popped, starting as an inexpensive treat when we were young, was transformed into something wicked cool that any kid could do on your new fangled electric stove top with the invention of Jiffy Pop.

You remember, swirl it around on the heat, and as it pops the flat top expands into this bulbous shape, a Fuller geodesic dome where steam escapes out the top and you have popcorn!

Today, Jiffy Pop may be best known for cooking over the campfire by the younger crowd. And disappointingly doesn’t taste as good as you remember.

Popcorn is way more than a movie treat or a kid-based snack.

As an adult snack it is low in calories and great for poop relief. It’s the fiber in the corn that helps there. One cup of air-popped popcorn has about a gram of fiber and 30 calories. So partake in popped popcorn in a plentiful way to push the...diet forward.

Popcorn is one of the great snacks you can “eat-a-lot” of and with a little flavor topping, is delicious and yet minimal in calories!

The trick is to air pop them. Though using a pan is quite satisfying and uses muscles to burn a calorie or two, it does require some kind of fat. Ghee, butter, olive oil, or bacon fat is perfect to pop the corn to perfection! This is not however calorie counting helpful.

It is important to avoid the oils if you can, or minimize at best, to avoid the calories thus allowing more popped corn to pop into your mouth.

Olive oil in a super fine mister works well and a good option to start...if you want some fat.

For tossing, a big bowl works great. The goal is to get a little moisture involved to get your salt and paprika to stick. Consider lime juice or a vinegar as an alternative to butter that won’t over power the spice you might choose.

Or when the popcorn is just hot and popped, sprinkle with Parmigiano-Reggiano so it will melt in to the kernels. You can use the heat of the air-popper to keep things warm.

Some believe super-fine salt is best if you can get it to stick. Careful though, super-fine salt can easily be too much on one kernel and none on another. Easily bitten flake salt might work better, especially if there is no moisture involved and you are eating by the handful. Though it is possible to get no salt at all.

If you crave salt with your popped corn, finding a solution that works for you is part of the challenge and reward for eating less.

Now on the other hand (popcorn eating can be an ambidextrous thing, just think of your first movie date and where you sat was way more important than where the location of the popcorn was), overindulging with flavor creates fun and is possible even if you are watching the waistline. Remember, your popcorn is pretty low in calories and can help with flow!

Chocolate is good, though that it is more like a dipping than a topping, and it does add calories. Sugar of any kind, dry, wet or in a syrup is like dessert. Shrimp dust, truffle salt, or fish sauce misted would be good, full-flavored and definitely not for everyone!

Mix it up, try anything, even disasters will make you smile, after all, food is happiness.

Tartuflanghe White Truffle Powder
Tartuflanghe
White Truffle Powder!

Topping popcorn with White Truffle is delicious and subtle.

This amazing jar of Tartuflanghe white truffle powder has just a touch of salt in it. That’s right, for you truffle lovers, this might be the most important culinary movie you make in your life.

It has the aroma and the taste of white truffle (that’s because it is truffle, not some conception borne in a test tube) and is like truffle fairy dust you can gently toss with a flick of your wrist over a vat of popcorn. (Because it is so light it might not add any calories to your already popped dinner.) It truly might be the ultimate in truffle love!

Keep in mind, that the creator of this white truffle treat was not thinking of culinary popcorn. Most likely he was thinking how to preserve the wonderfully nuanced flavors of the elusive white truffle to add at any time, at a moment's notice, to the dish you just created!

Truffle and popcorn, now that is a diet worth eating.

Fish Sauce Catgegory

Old as the hills Fish Sauce
it must be one of the original flavor enhancers

Gourmet fish sauce is old as the hills and it's being discovered as the “new miracle” (delicious & special) ingredient, even though high-quality fish sauce has been around for thousands of years.

Gourmet fish sauce has all the things that I don't like in a fresh fish.

The stink of high-quality fish sauce, which is the smell of fermentation, is big and vibrant in a strong kind of way. It’s a magical concoction, a potion for your food, so it really qualifies in the truest definition of an elixir.

Though gourmet fish sauce is not so tasty to the tongue, it’s really hard to think of the brew as "fishy." Romance is what “elixir” means to me, and thus less fishy and more, well, sweetly romantic.

But as an ingredient, gourmet fish sauce is truly one of the most amazing things you can add to many, many dishes. From a drop to a splash to actually measuring out a potion, you can add flavor and taste with high-quality fish sauce like almost no other ingredient you can find.

It’s not just salt, though the sodium has to contribute to the enhanced flood of sensitivity in your sensors, it’s flavor that does it. The flavor, that fishy thing, mostly anchovies, umami, is strong and embodies Thwak! Pow! Swoosh! Wham! And the funny thing is, it never comes out as fishy. Instead, it brings out the best in whomever it has joined forces with on your plate.

Remember, a little, we’re talking drops, goes an amazingly long way. High-quality fish sauce is a kitchen secret from Southeast Asia to Japan, aged in Whiskey Barrels to slow-cookers in Italy, all different and all with amazing properties.

Add some to your next vinaigrette, spritz the greens in a sandwich, toss your veggies with some before you grill or add it to the marinade in your next slow cooked meat. Think of a tofu hotpot and a splash of elixir potion to send you to the next level, or at least your taste buds can go there!

Saf-Instant GOLD Instant Yeast
GOLD
Instant Yeast!

An alternative to dry active yeast. No need to adjust the amount, just substitute one for one. No need to pre-activate in water. Just add directly to the mixture at the beginning of the process.

Gold formulated instant yeast is used primarily for making sweet breads and other doughs that have a lot of sugar. Sweet breads are notoriously slow to rise because the sugar in the dough is absorbing much of the available water and not leaving enough for the yeast. The Saf-Instant Gold yeast is formulated to combat that problem, and results in a shorter rising time for sweet breads.

This single-celled fungus is what makes dough rise. It consumes sugar and excretes carbon dioxide gas, which is a good thing, creating air bubbles. These bubbles make the bread rise.

The number one yeast developed by a French company and used by bakers all over the world. Store in the freezer, no need to thaw before using.

Sweet Stuff
Sugar of all kinds

We have searched high and low, and are continuing to search, for the highest-quality, organic specialty sugars for sale.

Quality specialty sugars are disappearing from the store shelves and we are on the quest to find the best.

You will find brown sugar (such as dark muscovado sugar and light muscovado sugar), confectioner or fondant (also called powdered) sugar, super fine (caster) sugar, raw sugar and sugar cubes, and turbinado sugar. And while you are browsing among the sugars, don't miss the Steen's home-style molasses and 100% pure cane syrup, and the granulated coconut palm sugars. The cane syrup is a great substitute for corn syrup. We now use it instead of Karo syrup in our Christmas pecan pies.

San Giacomo Essenza Balsamic
San Giacomo
Essenza Balsamic

Andrea has created this hidden gem. A sophisticated San Giacomo Balsamic with the personality of a Red Seal Tradizionale. Beautiful!

This exquisite Essenza balsamic vinegar is velvety smooth with a lingering tang and flavor, making it a perfect complement to creamy desserts, meat and well-seasoned cheeses.

Essenza balsamic vinegar is made from cooked-down grape must aged in small wood barrels. Distinguishing it from other balsamics, it is aged on the second floor of the barn of the Acetaia (traditional vinegar making establishment), allowing it to benefit from Italy's summertime heat, which concentrates and improves its structure and aroma.

Rice Bran Oil
Rice Bran Oil
an Essential Pantry

Delicate yet not flavorful, rice bran oil just may be the world's healthiest edible oil. Rice bran oil comes from the most nutritious part of the rice grain, loaded with monounsaturated fats & polyunsaturated fats, as well as vitamin E. These are the good fats that help your body lose weight.

Which means that Non-GMO rice bran oil is not only nutritious, but a superior salad, cooking, baking and frying oil that leaves no lingering aftertaste.

Extremely versatile, rice bran oil is an excellent choice for baking as well as just about any cooking method, from deep-frying to pan-frying, sautéing to stir frying, baking to grilling.

High Smoke Point: At 485 degrees, it is higher than either peanut oil or grapeseed oil, preventing fatty acid breakdown at high temperatures. Its light viscosity allows less oil to be absorbed in cooking, thereby reducing overall calories - many of our chefs have reported using about half the cooking oil they used to use, due to the fact that Rice Bran oil is so thin.

Non-GMO rice bran oil mixes better in salad dressings and improves the taste of baked goods, providing cholesterol reduction, nutritional and anti-oxidant value.

Almost no flavor: Which means it mixes well with others. Will not impart flavor to foods, letting all the other ingredients shine though.

Excellent Shelf Life: Rice bran oil has a long shelf life compared to other cooking oils, partly because of these antioxidants.

Ayam Coconut Milk Premium Coconut Cream

Premium Coconut Milk Cream!

Just a few hundred people a year die from coconuts falling on their head worldwide, so one is reasonably safe unless there's a coconut tree nearby.

Coconut milk and water, on the other hand, have been touted recently as exponentially, unbelievably very fabulous for you. We don't know about that, but we do know that the Ayam coconut milk that we use is indeed fabulous! Consisting of just two ingredients: coconut kernel extract and water. That's it.

Filled with lots of B vitamins and other good stuff, coconut milk is a versatile and surprisingly useful ingredient to have in your pantry.

Not only is Ayam coconut milk useful for desserts such as coconut cream pie, coconut cupcakes, coconut hot white chocolate, and of course, coconut ice cream.

It’s also a wonderful ingredient in savory dishes. Think of a Thai Curry for your shrimp or a coconut rice (use coconut milk to cook the rice) or a wonderful curry garlic pepper milk sauce for your fresh fish!

We opened and tasted a boat load of coconut milk and this is the best we have found!

Marc's Best Mashed Potatoes Recipe!

Marc is not a eat-to-live or live-to-eat kind of human, what he is is a fanatical eater who therefore loves to cook.

When I asked Marc for a recipe, he texted me back instantly. You have to know Marc and know his pride in his children is giant, and in the text I could hear him yelling,

"My daughter has a fantastic recipe for mashed potatoes. They are the best mashed potatoes I’ve ever had. Is that good? Or is there something else you would like from me?"

I responded with "Anything you want to share that you want to make this time of year...."

He promptly sent his daughters recipe.
