When you pop the first Early Robin Cherry of the season it’s like an explosion of memory! You close your eyes with your arms outstretched as you reach to the sky and feel the sun bathe your face, and as you spin you feel like the steadicam is circling you in the reverse direction as the opening scene of your own movie begins! It’s that great an explosion of life!
For some reason this fleshy drupe (a stone fruit), a derivative of Prunus avium, the sweet cherry, has this amazing ability to make you feel alive and farm fresh!
They certainly make you feel like you’re in touch with the land. Cherries, I would argue, are like no other fruit on the planet in their ability to bring a smile to ones face!
If you hate cherries I would expect that 1) you have never had a good cherry (let’s face it, often by the time cherries make it to the grocer they can be so-so), 2)you grew up picking cherries and just can’t stand them (my Dad couldn't stand salmon for the longest time after working in a cannery in Alaska, or 3) you’re not a sweet person.
Cherries are one of nature’s true pleasures! With a pop when you crunch, a sweetness like no other, these little orbs are packed with healthy goodness that are one of the best natural fighters of old age!
Did you know if you eat a dozen cherries a day you have a 35% lower risk of a gout attack? If you eat 72 cherries over 2 days your risk goes down 50%! And how about these benefits, like better sleep (eat before bedtime), less joint pain (reduce inflammation), and maybe even reduced belly fat!

First up are the Early Robins. Smaller and sweeter than Rainiers, they extend the cherry season by coming in even earlier than the coveted Rainiers. From the Stennes Family Orchards, who share with us the amazing Rainier cherries, come these just-in-time, picked-at-their-peak cherries. It is never too early to place your order to hold your place in line for cherries!
The cool night time temperatures of northern Chelan help to create a firmer flesh than their brethren grown to the south. That is just one reason why our cherries are so good and worth waiting for.
All of the varieties of cherries we carry are hand chosen in the orchard, hand sorted on the line, and then we sort them two more times in our cool room, before we ship them to you. No grab and bag here!

Easy and Basic
Cherry Clafouti Recipe
This is the easy squeezy simple Clafouti Recipe. You can't fail unless you forget to bake it!
The most time consuming step is pitting and slicing the cherries. (In keeping with the "real" recipe the cherries aren't pitted). Keep in mind any fruit will do wonderfully. I use pears in the fall and peaches when in season.

The Lapin is a big, beautiful, dark red, sweet cherry. Lapin cherries are some of the largest, juiciest cherries that grow on trees. They're great for snacking, and so big that one cherry is a mouthful!
Kevin Stennes, of Stennes Family Farms, says that Lapins are his favorite of all the cherries. And he should know....
Although Bings are the more well-known, sweet eating cherry, some of us here at ChefShop.com prefer the Lapin - you'll have to try them for yourself! The crunchiness and juiciness just won our hearts . . . and our stomachs.

Picked-at-their-Peak Sweet Washington Cherries!
A brilliant red, Sweethearts are a fairly new sweet cherry developed in British Columbia. A large, bright red fruit that typically matures five to seven days after Lapins, the Sweethearts have great flavor with a nice hint of tart on the finish to balance the sweetness.
Their unique taste is a spectacular finale for the summer cherry season. The ever so slight tartness makes them the best of the bunch for baking, as they lend that slight "sour" cherry flavor to pies, breads and my favorite recipe: cherry clafouti
The last four harvests have produced the most spectacular Sweethearts! They are a wonderful eating cherry!

Heritage Shortbread from South Carolina
This buttery, crisp - but slightly moist - shortbread is handmade by Willow McCrain in South Carolina's Lowcountry. It's baked to a golden brown and its texture and flavor border on the sublime.
Willow uses only the best ingredients -- and you can tell. We like our shortbread cookies to be crisp when you bite into them, but not hard. And these shortbreads do not disappoint!
We met Willow in New York in July many years ago. It was one of the highlights of our visit, not only because her shortbread was exceptional (and we tasted a lot of shortbread that day!), but because we got to talk to Willow. It is always one of the great benefits in this business to meet the people who make the food! Her care about the quality of the product shines thru with every bite!
What also sticks with me after all these years is her care for the people who work with her to create these shortbreads. It is her extension of "family" you can feel every time you hold and open a box of Heritage Shortbread.
Willow uses an old family recipe -- past down from mother to daughter for generations. Although the recipe is not complicated and has just a few pure ingredients, the key secret to the consistent and delicious outcome is clearly the love and caring that Willow puts into every batch.

Mama Lil's
Kick Butt Peppers!
These pickled Hungarian peppers work really well with meaty hot sandwiches with cheese. In other words, these peppers really mix well with others; they enhance as much as they contribute.
From Abruzzi, Italy to Youngstown, Ohio, and then to the Yakima Valley in Eastern Washington comes a recipe that has moved with the people.
At the core of this condiment is the Hungarian Hot Wax, known as the Goathorn Pepper. It took a young man who moved to Seattle and who learned early on that his one jar allotment from his Mom every year was not enough to satisfy his cravings. If he wanted to share with his friends, he needed to make it himself.
In 1992 he did just that. In the basement kitchen of the Seattle Unitarian Church, the first batch of Mama Lil’s Peppers were born. Over the years Mama Lil's has transformed from the local Church Kitchen, to a robust food service business, serving hundreds of hot dog joints and fancy dancy eateries. Whole Artichokes
with Stem - Romana Style in Olive Oil
These elegant, long stemmed artichokes are pretty and big. You, of course, could cut them up and make a recipe...such as you might with Carciofi alla Romana (one of the most famous artichoke recipes) using artichoke hearts without the stem.
Instead, think beauty. Lay just one artichoke down gently on a plate. Dress it up with some fresh mint and parsley leaves...or not.
Gently slice it with a sharp paring knife and eat it one enjoyable piece at a time. Fork it for your first bite.
The result is a bite filled with flavor and a wonderful mouth-feel. The bite is not-too-soft, but tender, with just the right resistance and a gentle artichoke-y crunch. The leaves and the heart have their own bite and marry well together. Unlike the grocery artichoke hearts that you get preserved in brine, there is no mushy-ness here, and the leaves are soft enough to easily chew - at least 99-precent of the time.
The long stem is just an extension of all the joy that a Romana style Artichoke heart has. It is, all on its own, an appetizer you could serve at suave table for one. Or even more.
PLUS, artichoke hearts are good for you! I eat 1 to 2 a day -- keeps those gall bladder spasms away. Like a charm! Plus, I'm getting one of my daily servings of veggies. Perfect!

La Dalia Pimentón de la Vera
Smoked Spanish Sweet Paprika
Pimentón de la Vera is a paprika made from luscious red peppers (pimientos) grown in the La Vera microclimate of Spain's Extremadura region.
When harvest begins in the fall, entire families get involved. The mature peppers are placed in drying houses, where they are smoke-dried over oak fires - the mark of genuine pimenton de la vera.
The dried peppers are then stone ground into a powder. La Dalia Pimenton de la Vera is D.O. protected - Pimento de la Vera was the first pepper to receive such designation in Spain.
Dulce is the "sweet" version of this smoked paprika (rather than hot-spicy); its hint of sweetness flows through its smoky warm flavor.
The flavor of pimentón is much more complex than Hungarian paprika and is an absolutely essential ingredient for many Spanish dishes.
