Take this recipe from the label (Bordens Eagle Brand of sweetened condensed milk) and change out the graham crackers with any of Effie's Biscuits and make it much better. Open this jar and you are greeted with a loose, bumpy surface of jam.

This look makes you want to skim the surface instead of taking a big dip with your spoon. As you skim the surface, you pick up bits and pieces and as you lift the spoon the jam trails on.

To the nose, you smell the wonderful combination of strawberry and rhubarb. This is one of our favorite combinations of fruit on the planet.

Open the jar and on the top you see a smooth ice rink of jam.

Dip your first spoon in and you know that you have a sea of jelly.

The taste is all blackcurrant. It is 55% blackcurrants, 45% unrefined brown cane sugar and a little pectin.

It is not sweet in the typical sweet jammy way. Instead, what you get is the blackcurrants that are no longer puckery, close-your-eyes, sour.

And you can, with your eyes open, taste all the blackcurrant flavor. A bit of blueberry, a bit of berry, rich color and sour bitter that bites at the back of your throat.

Blackcurrants are considered a powerhouse of goodness.

They are considered good for your immune system, blood flow, gut health, kidney health and your eyes.

Full of vitamins, most notably C, with 4 times the amount as the orange. The other vitamins contained in this little berry are A, B-1, B-5 , B-6, and E.

With just two ingredients - fruit 55% and unrefined brown sugar 45%.

Open the jar with a satisfying pop, dip your spoon in, break the surface tension, releasing the gorgeous slivers of orange to the top.

You can separate the mouth feel into two parts. The jelly/jam and the bits of peel. If you chew a spoonful it all comes together just like you dream it would. If you suck and swirl the jelly separates from the slivers, some of which are so small that you can’t chew them.

I recommend just going for it and chewing away. The bite is a wonderful combination of jelly and bits! What a joy!

All together a mouthful is fulfilling.

What enters the mouth is the sweet jelly jam filled with this orange citrus taste.

Then the flavor of the bitter orange grows and as it all disappears, you realize there is a bitter edge that evolves on the outside, in the cheeks.

It is quite wonderful. It is this leftover taste that reminds you the bitter orange has been there. Quite addictive!

What is bitter orange?

Bitter orange (Citrus aurantium) is also called sour orange; Seville (not Valencia), bigarade, is the tree and its fruit. Originally from China and/or Southeast Asia. There are now many varieties that have been spread across the world.

The fruit's essential oils are used for perfume and as a flavor agent in food.

It has also been used in herbal medicines because it contains synephrine which is similar to the herb ephedra which can suppress appetite. As a supplement in concentrated form, ephedra has been linked to severe reactions, including heart attacks and death.

Because of the use in pills, synephrine has been banned by the NCAA as a performance enhancing substance.

So don’t jam with this jam if you are competing.

This oak-aged Trio Red Wine Vinegar from Katz Farms takes two years to make.

This terrific vinegar is crafted using the traditional "Orleans" Method.

It's a blend of carefully selected vintages of Merlot, Zinfandel and Cabernet Sauvignon from the heart of one of the world's great wine appellations, the Sonoma Valley. "Trio" has been crafted to mirror the classic Meritage blends where small lots of selected red varietals are mixed to create wines of great structure and character.

The finished blend is well-balanced and full-flavored and retains the varietal characteristics of the grapes with nuances of cherry, raspberry and oak.

Organic Dried Mung Dal - Split Mung Beans

The mung bean is a bean that is everywhere, except perhaps in your pantry. History tells us that India was the first to cultivate the bean in 1500 AD. The bean then spread to the diets of East, Southeast Asia and the Indian subcontinent.

Today, it is widespread, although not common here in the animal protein dominant US.

Moong dal is the mung bean split in two, either with or without its skin. With the skin the bean is green, and without it is a pale yellow. Either/or can be used in recipes, with only the cooking times adjusted for the difference.

In Indian cooking, out of all the beans, Moong dal is perhaps the most popular. Considered to be easily digestible; according to Ayurveda, the Mung bean is “tridoshic”, (a quality that is a supremely rare in a human). Tridoshic is described as an equal balance of Vata, Pitta and Kapha doshas, the elements responsible for mental, emotional and physiological health.

Though my knowledge of Ayurveda is minimal, I find it quite interesting. Food is a key ingredient to one's health; what’s not to like about that?

This weekend we are sharing classic recipes using Moong dal as the base. One of the big benefits is that these recipes include some of my favorite nostril-filling spices.

So you get the potential benefits of Moong dal mixed with spices that all have wonderful health properties, as well. (Keep in mind, I think all food is good for you, especially salty and sweet!)

This golden brown, toasted sesame oil adds a rich, nutty flavor to your vinaigrettes, stir-fry and BBQ marinades. Not over-powering, this oil adds just the right amount of toasty sesame punch.

Sesame oil, also known as Gingelly Oil and Til Oil, is an ancient ingredient. The Assyrians used it as a cooking oil more than 2500 years ago. It was an expensive delicacy back then, and a hundred years later in Persia, it was still an oil only the rich could afford.

Today, it's still used as a medicine in India, and oil pressed from the raw sesame seeds is commonly used as a massage oil in Ayurvedic medicine.

La Tourangelle has partnered with one of the oldest Japanese oil mills to bring you this toasted sesame oil, crafted in central Japan following traditional methods that are over 270 years old. Sesame seeds are slowly roasted using lower temperatures.

The quality of Sesame Oil varies depending on the quality of the seeds, and the length and temperature of the toasting process.

La Tourangelle's Japanese partner uses only the freshest, highest quality seeds that they then painstakingly clean and slow toast to produce the best quality product, all the while maintaining the integrity of the oil and creating a unique and wonderful flavor.

The result is a lighter colored, more richly flavored oil with a subtle, toasted taste.

Sesame seed oil is low in saturated fatty acid content and high in polyunsaturated fatty acid (about 40% omega 6 and 40% omega 9) content making it a very healthy oil - although best to keep it refrigerated once opened, as the high concentration of unsaturated fatty acids makes sesame oil somewhat delicate, with a medium heat smoke point of 275 degrees.

Raw sesame oil has a much higher smoke point due to the high concentration of anti-oxidants, and raw is suitable for high-temperature cooking, where toasted sesame oil is used primarily as a flavor-adding ingredient to Asian and Indian dishes.

We love pureed soups. Easy to make, uncomplicated, and when food is so simple, if the ingredients are the best, so is the soup! Freshly dried split peas are exceptional and make a soup excellent. It's the blending of the starch and other ingredients that give this soup its wonderful body. Use a food mill, food processor or your stick blender, to achieve just the right consistency.
