Planning to be cold on purpose is one of those things we truly try to avoid. Instead, we try to plan to be warm, navigating to avoid the chill of the first north winds of the fall and soon winter.

And coming in from the cold to a cup of hot chocolate is like being in a Hallmark movie. It is the memories, the happiness, it’s the warm and cuddly that comes with holding the cup and that first hot sip.

Whether your Mom made it for you, or you made it for your best friend, it seems that the memories are not constrained to just one. It’s easy bliss.

The making of hot chocolate can be as easy as the stir of a packet of powder in hot water, or as ritualistic as melting chocolate in milk, adding cinnamon, chili, nutmeg, and our new favorite, Golden Milk. And don’t forget the marshmallows and candy canes if you have the hankering.

Every part of “Hot Chocolate” is good for you. We have all heard that chocolate is rich in antioxidants to fight for a healthy body, one of the superfoods (I believe in superfoods if that means you can eat more for your heart). And “hot” is good, too, according to Cornell (the college not the character) researchers who in a study found more of those antioxidants are released when you heat them up!

Be prepared for the next few chilly months with plenty of chocolate on hand to make memories and a nice, upper lip mustache!

Hand-bent to look like a shepherd’s staff, the candy cane has a history reaching back hundreds of years.

Popular belief is that white sugar sticks were transformed for children who would get restless during the long-winded holiday sermons. And before we had too many gifts under the tree, candy canes hung as gifts for children.

They were truly a treat. Today’s wimpy striped sticks are just a peppermint candy stretched to resemble a cane.

Our sturdy Swedish candy canes are nothing like the commercial ones you see at the Five and Dime. They’re plump, beautifully bent peppermint sticks, well-worth eating after you’ve enjoyed them hanging on the tree.

These candy canes are approximately 5.5” tall, from the top of the curve to the bottom of the stem. The days of giving away candy-colored cars for Christmas are over.

Italian Panforte

The food of the Crusaders
a made-up food story

The quest for the Holy Grail is legendary, tied to King Arthur, Guinevere, Sir Lancelot, and the knights of the Rectangular Table. And, though many stories abound, after extensive research on t\Tumblr and Facebook, it seems clear that what was really happening in this famous story was in fact about food.

It starts with The Traveling Nights, a singing group of the 12th century made-up of, yes, knights, including Lancelot. As they traveled from gig to gig, they had to have food with them to endure the long rides in the hard-wheeled wagons pulled by oxen.

When they arrived in Siena, they found much happiness with a round food maven, known as Guinevere, who served them a spiced bread known as Panforte, which was often eaten in a wedge as a dessert or with a hot cup of cappuccino.

This special food changed two important facts in history. One Italian knight changed his name and became a hermit. The other returned to the table at home and insisted on changing the long rectangular table to a round one.

This action created a wedge between the King, who loved Fruitcake, made in a rectangular pan and the Knight who had fallen for his new found love, the round Panforte.

This dense, fabulous, sometimes richly spiced "bread" is now sought by many (and not just knights) the world over. The recipes are kept secret by the Siena bakers, and each one is different, yet all share the same hard-to-resist, wonderful flavor and classic chewy texture.

Gorgeous to share and eat, like Panettone, once you taste it, you know the holidays are here!

Beaufort Cheese - Alpine Summer

A Coveted Cheese in Limited Supply!

This is a special wheel - Alpine (d'Alpage) Beaufort is rarely available and must usually be reserved at least a year in advance. And they are rarely this age. So order this Alpine Beaufort cheese soon.

Made in mountain chalets (aka huts) in the French Alps, Beaufort d’Alpage is from the milk of Tarantaise cattle, who gaze at the French Alps...while grazing freely, choosing to eat what they want of the grasses and flowers of the high pasture. These Tarentaise cattle (a domesticated cow that adapted to high altitude hiking in steep and treacherous hoofing and have not co-mingled with other cows) are from the Haute-Savoie and are known to produce some of the best milk on the planet for making cheese.

Beaufort D’Alpage is made in wheels that first remind you of Parmigiano-Reggiano and can often weigh over 100 pounds.

This Beaufort D’Alpage is made by Brand Coopérative Laitière de Haute Tarentaise, a coopérative located in Bourg St Maurice in close proximity to the famous French Alps Ski Resorts. It is these ski slopes in the winter that turn into the alpine meadows full of roughage in the spring, summer and early fall.

This semi-hard, cow’s milk cheese goes thru a creation process of curdling, scaling, brewing, molding, pressing, and hand work of salt rubbing in the morning and massaging in the afternoon. This process lasts up to two months. Then the Alpine Beaufort cheese is smear-ripened to create its distinctive flavor and pale yellow rind.

Aged over 14 months which brings a more mature flavor of nuttiness, floral, beef broth notes, with herbal and a hint of hay.

This AOC Beaufort D’Alpage is the best of the best, as summer alpine is the most cherished of all the Beaufort. It melts easily and is known for making the best fondue or a grilled cheese sandwich. Or you can cube it up, poke it with a toothpick and enjoy it with some fruity wine!

The pistachio is cultivated in the municipalities of Bronte, between 400 and 900 meters above sea level.

This Meatloaf with Oatmeal recipe calls for adding pinhead oats to a blend of beef, pork and veal. The flavor is brightened by the addition of original Hawkshead Relish – a delicious Worcestershire Sauce-style condiment – and the pinhead oats provide a hearty and robust texture – a satisfying and really delicious combination.

Oatmeal and breadcrumbs have long been used in meatloaf as extenders and to keep the meat moist. Using breadcrumbs will yield a soft, tender texture, while the pinhead oats produce a more interesting loaf.
