Though movies are pretty romantically wonderful, nothing has ever compared to the love I felt when my daughter said, with her little hand in mine, “I love you Daddy." Or, seeing my father walk hand-in-hand with my 5-year-old son, oh so many years ago.

It explains a lot to me, why my Dad would give flowers to all the women in his life on Valentine's Day, not just to my Mom.

Grilled Pork Tenderloin with Chocolate Spice Rub Recipe, inspired by our mention in an issue of the Saveur 100. It is a nice twist to a more traditional pork tenderloin, and will produce beautiful results if you prepare and grill the loin properly.

You can adjust the size of the tenderloin, depending on how many you are serving. This recipe will easily work for smaller or larger tenderloins. Any unused rub can be stored in a container in the fridge for up to two weeks.

Lakrids by John Bulow

Licorice is the new drug of choice
More than a red vine

The first Lakrids by Johan Bülow shop opened in Svaneke, Denmark on 07.07.07. The idea was to cook the liquorice right in the shop, making sure that you could smell it within a radius of 100 meters. It worked. Everything was sold out within two hours. The last customer even bought the sample bowl on the counter.

It is our friend David – who over the years has introduced us to some of our all-time favorite foods, and whose personal enthusiasm for his “finds” is contagious - who introduced us to Lakrids Licorice.

On a recent trip to NYC, I visited with David, who continued to gush about Lakrids.

“I know you carry Lakrids, and that Eliza just ordered more, but you have to try these new flavors. I just visited the factory and met with Johan. This is a man who set out more than ten years ago to create liquorice anew!”

David went on to show me pictures from the factory on his phone, explaining all the cool machines.

“It’s such a great product” he said “and I find once people try it, they start to love it. Give them a taste of “A” (Chocolate Coated Licorice); I call it the Gateway Licorice (drug) to a happier life!”

But “A” is just the beginning...“B” is white chocolate/passion fruit, “C” is milk chocolate and coffee beans, and “D”...well, D is to die for: Caramel, Chocolate and Crunchy Sea Salt, and there are also “E”, “F” and "1", "2", "3" and "4"!

I’ve tried them all and they are good! Though, if I had to choose one to have with me on a desert island, it would be “A”.

But we get it.

Just because licorice (liquorice) is good for you doesn’t mean it’s top of your list to snack on or add to your next dish. And for many of us, it seems like the last thing you want in your mouth! But it’s worth the taste test, and once you do - like the Scandinavians - the sweetness of nature will make you happy.

Last summer (actually in 2019, it just seems like last year!) I started collecting canned beans. The original concept was to make eating beans easy, with a few hot dogs tossed in along with frozen (thawed by the time it went in) corn, heated up over the campfire.

Canned corn (think baseball can-of-corn) is easy, but kind of awful compared to modern frozen vegetables for texture and taste. And it turned out that for what I wanted to make - baked beans over the fire - canned beans of any kind just aren’t as good as making beans from dried.

And I tried a lot of canned beans and combinations of canned beans to test this. I really wanted it to be successful: think how easy it would be to open a can, add some extras and watch it heat up over the fire, then how wonderful to spoon your beans into a metal bowl or cup and get that movie sound of cowboys eating beans with a spoon.

Alas, going camping and cooking over the fire hasn’t happened for me in the last few years. And without our oven at home working, I made a lot of canned beans on the stovetop.

And I’m here to say, canned beans are just not as good as dried and soaked that you bake yourself.

I must admit one of my favorite things to make and eat is dried beans soaked overnight and baked in the oven all day! I personally like to cook them low and slow, with just onions, bacon, garlic, real maple syrup and mustard powder.

Ok, so that is a lot of hot air about beans...what I am excited about is that new beans are here. No matter what you do with beans, fresh is best! The crop this year is small; we were lucky to get a second delivery from the 2021 crop.

I have been practicing making good baked potatoes for a couple of years...and then I watched this (unexpectedly) great video from the new America's Test Kitchen about how to make perfect baked potatoes! And they are right...they are perfect.

Our version is a little different with the addition of MISO. The key though is temperature. Reach an internal 205 degrees F for perfection!

Delicate without adding a flavor, rice bran oil just may be the world's healthiest edible oil. Rice bran oil comes from the most nutritious part of the rice grain; loaded with monounsaturated fats & polyunsaturated fats, as well as vitamin E. These are the good fats that help your body lose weight.

This all means that Non-GMO rice bran oil is not only nutritious, but a superior salad, cooking, baking and frying oil that leaves no lingering aftertaste.

Extremely versatile, rice bran oil is an excellent choice for baking as well as just about any cooking method, from deep-frying to pan-frying, sautéing to stir-frying, baking to grilling.

High Smoke Point: At 485 degrees, it is higher than either peanut oil or grapeseed oil, preventing fatty acid breakdown at high temperatures. Its light viscosity allows less oil to be absorbed in cooking, thereby reducing overall calories - many of our chefs have reported using about half the cooking oil they typically use, due to the fact that Rice Bran oil is so thin.

Almost no flavor: Which means it plays well with others. Rice Bran will not impart flavor to foods, letting all the other ingredients shine though.

Excellent Shelf Life: Rice bran oil has a long shelf life compared to other cooking oils, partly because of the antioxidants. Most of the commercially-produced cooking oils don't have the same level of anti-oxidant protection - which means many of the commercial oils (vegetable oil, canola oil, corn oil and safflower oil, to name a few...) have already gone rancid when you buy them in the grocery store.

Non-GMO: Unlike almost all commercially-produced cooking oils, the highest-quality Rice Bran Oil comes from Brazil, and most of the finished product goes to Japan. (Rice bran oil is the preferred frying oil for tempura.)

Nutritional Benefits: Excellent source of vitamin E complex, antioxidants and other micro-nutrients which help fight free radicals and oxidation (otherwise known as rancidity).

A source of many other anti-oxidants, including tocopherols and tocotrienols, a unique antioxidant known as gamma y-oryzanol (known to decrease the symptoms of menopause), phytosterols, polyphenols and squalene.

An excellent balance of saturated, monounsaturated and polyunsaturated fats, as recommended by such organizations as the American Heart Association and the World Health Organization. Approx lipid breakdown: 0-2% Omega 3's, 34-39% Omega 6's*, 38-42% Omega 9's, 0-3% Stearic Acid, and approx 18-21% Omega 7's (Palmitic Acid), know to help decrease C-reactive protein (CRP), as well as triglycerides and LDL cholesterol, and increase HDL cholesterol**
