Hot Pepper Sauce
When these hot sauces first arrived, we had a hunch that something good was inside. Keep in mind that hot sauces come across our table all year round. Over the years that is a lot of hot sauces.
Most often we taste very hot stuff. And most often it is just heat. There are super-hot ?? out there. And adding a little or a lot to a sauce can transform, change, or kill a good dish. Overwhelming spice heat dominates a dish and does not enhance it.
So when we first tried these we were trepidatious about how hot they would be and if we would have any taste buds left after a drop.
The great news is that these hot sauces are kicking good. They bring heat with flavor - your taste buds are left intact and the food shines through!
Each of these “sauces” is delicious, each has its own character and each has an element that makes it different from the others and from other hot sauces. We chose these 5 from the whole line. They please our taste buds, our hot person loves them, and they taste delicious. Perfect.
Now, if you are a hot sauce lover, and have tried everything on the planet, you may know these already (if you don’t you should) and your standards for what is hot is much hotter than ours. We think these hot sauces are plenty hot!
We have found that using a drop of hot can change a dish without making it hot. It is like the way pepper opens your pores (taste sensory glands) to the flavor in the dish. Sometimes you just want heat. And when you do you can sprinkle and shake to your heart’s content to get the heat you crave! And while you are heating up, the heat is full of flavor!
Any (or all) of these hot sauces are worth having in your essential pantry and unlike many foods that mellow with age, hot sauces keep very well (and stay hot) over time!
What is really nice about all of the Blacklick Hot Sauces is that at the end of the day – regardless of their degree of hot - their flavor is still pronounced, they are still friendly, and are a creative ingredient. Effie's Homemade Almond
with Cardamom Biscuits

Cheeky Chilli Salsa
Hawkshead Relish
A very red salsa (thanks to tomatoes) that you might anticipate will be super-hot, but it isn’t.
You’ll look inside the jar and think you see corn kernels and when you take the bait you realize it is indeed corn, and somehow it’s the perfect combination of tomato, chili, corn and spices.
At the end of your taste, after the majority of the salsa is gone, your tongue and the inside of your mouth will feel tingly and prickly – but it’s very pleasant.
After multiple spoonfuls there will be a swell of spicy - quite delicious!

Buckwheat Noodles with Yam
from Zaru Soba
Buckwheat soba noodles are one of Japan's best-loved foods. They are so popular that certain restaurants have nothing but these noodles on their menus.
These delicious noodles take just minutes to prepare in hot water and have a distinctive nutty flavor that teams well with cold dashi broth, scallions, sesame oil and bean sprouts. This common preparation can also be embellished with shitake, pork, vegetables and tempura.
They can be chopped and rolled with vegetables in nori for a vegetarian sushi, or coated with a sheen of butter and tossed with sautéed fresh vegetables.
However you nibble on them, don't forget to cook up a batch on New Year's Eve - slurping down these long noodles is said to ensure a long and happy life.

Katsuobushi
Bonito Flakes
These thin shavings of bonito, a fish similar to tuna, are an essential ingredient in Japanese cuisine. Katsuobushi dried bonito flakes are often combined with kombu seaweed to make dashi, the base stock for many Japanese soups and broths. But that's just the beginning.
In addition to its many uses in traditional Japanese cooking, we think bonito is a great addition to any pantry. It's a versatile, easy-to-use seasoning that adds a slightly smoky flavor to all sorts of salads, dips and dressings. It's also terrific for enhancing steamed or sautéed vegetables, with or without tofu. And another discovery…if you like bonito, keep it out of reach of your gourmet-inclined cat! They can't seem to get enough of the stuff.

Recca Pantescan Salted Capers
Non-Pareil
Recca capers are grown on the island of Pantelleria and preserved in native sea salt by Agostino Recca. The island of Pantelleria is 70 km away from Africa and 85 km from Sicily. It is considered by many culinary aficionados as the ultimate source for capers.
These are small "non-pareil" Pantescan capers, full of flavor. Being preserved in sea salt means that none of the aromatic flavor has been lost. A fabulous find indeed!

Verjus Rouge
Red Verjuice
Verjus (pronounced vair-ZHOO) is the tart, fresh juice of unripe wine grapes. It is a culinary ingredient indigenous to the world's wine producing regions that is used in sauce making, for poaching fish and meat, and to dress lettuces, vegetables and fruit.
Verjus or "verjuice" as it is sometimes called, literally means green juice in the sense that it's made from fruit that has yet to fully ripen - it's green. It is used to add acidity to foods, an important component in food and in cooking.
Napa Valley Verjus Rouge is made from wine grapes that are removed from the vine in midsummer, at a point in the growing cycle called veraison.
At veraison, they change in color from green to black, and begin to soften enough to press.
As the grapes arrive at the winery, they are loaded into large pneumatic presses where the juice is gently extracted, then transferred to refrigerated stainless steel tanks. The juice is allowed to settle for a couple of days, then it is lightly filtered and packaged.
The fresh verjus is at its best right after pressing, and can be packaged immediately. The challenging part of the production is keeping the verjus from fermenting and becoming wine; crushed grapes will spontaneously ferment due to airborne yeasts.
Commercially, non-alcoholic red grape juice is usually stabilized by either adding powerful preservatives like benzoic acid, or by traditional canning methods - the juice must be heated to a temperature high enough to kill yeast cells and bacteria.
Both of these methods adversely affect the taste of the finished product.
At Fusion Foods, their goal is to produce the most natural, fresh-tasting juice by protecting its delicate aromas and flavors. To achieve this they use a technology called aseptic packaging. With this process, no strong preservatives are necessary and the fresh verjus is exposed to high temperature for only 4 seconds.

Marc is not an eat-to-live or live-to-eat kind of human, what he is, is a fanatical eater who therefore loves to cook.
When I asked Marc for a recipe, he texted me back instantly. You have to know Marc and know his pride in his children is giant, and in the text I could hear him yelling....
"My daughter has a fantastic recipe for mashed potatoes. They are the best mashed potatoes I’ve ever had. Is that good? Or is there something else you would like from me?"
I responded with, "Anything you want to share that you want to make this time of year...."
He promptly sent his daughter's recipe.
I was told that he and his daughter talk on the phone every Sunday about food.

Cranberry sauce or cranberry relish is made out of cranberries, along with sugar and other favorings, and is usually associated with Thanksgiving (Turkey) dinner in North America and Christmas dinner in the United Kingdom. You will find some differences in recipes, depending on where the sauce is made; in Europe it is generally slightly more sour, while in North America it is usually sweeter.

Honey and Katz Apple Cider Vinaigrette Recipe
Walnut oil and cider vinegar are a natural pair and they are taken to new heights by the citrus honey. This honey apple cider vinegar dressing is particularly good over salads of hearty or bitter Spring greens. Try it on a combination of watercress, mache, arugula, and radicchio with some chunks of caramelized apple and toasted walnuts as a garnish - with these hearty greens, I would use La Tourangelle Roasted Walnut Oil, but if you are using it for lighter greens I would use the Maneyrol Lightly Roasted Black Walnut Oil from France.
