In our store people always ask if we have ever tasted this amazing 100-year-old balsamic vinegar. Well, I have thanks to the wonderful sharing of our customers who aquired our very first bottle. He cracked it open right then and there at the counter and shared a drop! It was like none other!
Balsamics aged 100 years or more are a rare find these days. They become as dense as molasses, and their fragrance and flavor are deep and heady - think of a 40 year old Tawny Port… rich like dark caramel, raisin, and a whole host of secondary notes.
Since it ages constantly, the characteristics of balsamic vinegar in the various aging phases vary. After a certain number of years, it becomes denser, loses fluidity and develops a real richness. At this point it should be treated with devotion.
Italian balsamic vinegar of this quality is best as a generous drop on your thenar muscle and then kissed off with your mouth. It is believed that your own body makeup combined with balsamic create a personal flavor unto your own.
This is indeed a rare find. You can be assured very few have ever seen this, let alone tasted!

Amazing Rose Syrup!
Not all roses are created equal!!
Sahime, pronounced SAH-hee-meh, is an amazing rose with large thick petals, deep red color and a full, rich sweet fragrance that is high in nutrients.
Atsushi Fukuma developed this particular strain of rose to be exceptional for use in food production.
The rose has a long history of being used for medicinal practices. For instance, when rose petals are soaked in water the water is used as a salve. It is also believed that the rose has wonderful digestive properties.
To make this rose syrup they combine the beet sugar from Hokkaido and the essence of boiling down the petals. The result is this amazing elixir.
Even before you pull the ring to open the top, you can smell the sweet rose inside.
This wonderfully potent rose syrup is perfect in mixed drinks, a cordial or in just bubbly aqua. One can also think of it as a syrup for ice cream, pastry, or your morning yogurt.

Sticky Toffee Sauce

No home should be without a jar of Sticky Toffee Sauce, heat and pour over sticky toffee pudding or ice cream. At home we sauté bananas in butter for a couple of minutes, serve with Sticky Toffee Sauce poured over the top along with a spoon of ice cream. Perfect!

Beech & Oak Smoked Shoyu
Suehiro - Kunsei Kaoru Murasaki Sumoku!
Even before you pull the top of the Shoyu you can smell the smokiness eeking out! Wow! Exciting!
You will first notice that it pours out perfectly into a spoon. The color of the dark shoyu is a deep, rich brownish red.
The whiff is smoky for sure, but not fake and not overpowering at all. The taste is smoky, yet incredibly gentle. The shoyu part of it is mellow and participates in the flavor, yet it is not salty at all.
This smoky shoyu is delicious and you could definitely sip it like an aperitif! You recognize it, even if you have never had it before, somewhere hidden in your taste memory is this flavor.
If you want to add some smokiness in your relationship this is the perfect way!
Light, yet present, finish with it, add it, drops of it, or create an amazing smokey cocktail!

Yuzu with Roasted Brown Rice
from Wildwood with 70-Percent Dark Chocolate Bar
These bars are so visually pleasing. Fun to look at and you can if you want, map out what you are going to bite first.
This bar is packed with some of my favorite things (and you can see them) - candied yuzu and roasted brown rice!
It was surprising to me that I ate the first bar so quickly! The combination of the chocolate and the rice and the yuzu is perfect. Not one overpowers the other and at the same time you get a hit of each element with almost every morsel!
This bar is just right! I am putting one in my own stocking!
