Recipes by Malathy – Maple-Applesauce Pancakes (makes 8 pancakes)

Summer has officially ended and as the temperature cools and the leaves begin to change color, we start looking forward to the traditional foods that bring us warmth and comfort throughout the fall season. There's no better way to start an autumn day than with a stack of hot pancakes made with some favorite fall flavors such as maple syrup, apple sauce, cinnamon and vanilla. This recipe is quick and easy, and allows for anyone on a special metabolic diet to enjoy a delicious meal!

Ingredients:

2 1/2 cups (275 gm) Taste Connections Versa Mix
1 tablespoon cornmeal
1/2 teaspoon ground cinnamon
1/4 cup applesauce
2 tablespoons maple syrup
1/2 teaspoon apple cider vinegar
1/2 teaspoon vanilla
1 – 1 1/2 cups water or club soda (to make the batter)

Directions:

Mix the dry ingredients together in a bowl. Mix applesauce, maple syrup, vinegar, vanilla and 1 cup of water or club soda together and add to the dry ingredients beating well to make a smooth batter. If it doesn't have batter consistency add 1/2 cup more water or club soda to make it into a pancake batter. Make the pancakes on a buttered or oil sprayed fry pan.

  • In England, (and all over the UK) the Tuesday before Lent is known as Pancake Day, or Shrove Tuesday. On that day it is traditional to eat pancakes, toss pancakes and take part in pancake races, which now is celebrated in places as diverse as New Orleans, Brazil and Australia.
  • Shrove Tuesday is the day before Ash Wednesday, the first day of Lent. Traditionally, families would use up their luxury foods like milk, sugar, eggs and butter, before the 40 days of fasting began – all the ingredients to make perfect pancakes!
  • The first recipe for a pancake appeared in an English cookbook back in the fifteenth century.
  • Maple Syrup indeed owes its name to the Maple tree. The Algonquin Indians collected the trees and then boiled them to produce 1 liter of pure Maple Syrup from 40 liters of sap.
  • Each year since 1986 an extravagant breakfast has been held in Springfield, Massachusetts. Hundreds of volunteers help with the event - in 1999, more than 71,233 servings of pancakes were served to more than 40,000 people!
