Chickpeas York Street Beans
Chickpeas pair well with pastas, rice, and even heartier grains, like hard wheat and farro. They make a distinctive dip, of course, but they're even better in a long cooking stew. They can also be ground for flour, deep fried, or even made into sweet pastes, candies and puddings. For me, chickpeas were the gateway food that opened up my palate to all things Middle Eastern.

Apple Vinegar
Apple Cider Vinegar
This time of year, KATZ Apple Cider Vinegar is the favorite. The refreshing and the distinct taste of Gravenstein Apples makes this vinegar a treat all summer long.

Everyone is shocked at how good this is! The usual response after tasting it is to check the bottle and then say, "That is nothing like any apple cider vinegar I've had before!"

First of all - anything pork! Braised pork chops with leeks and apple cider vinegar is a favorite.
* Makes a mean coleslaw or braised cabbage
* Salad Dressings ... simply terrific - just add a teaspoon of mustard, a shallot (finely minced) and your favorite extra-virgin olive oil
* Perfect compliment for walnuts, smoked turkey, and goat cheese salad
* Makes the best Waldorf Salad
* Pan-roasted chicken breast with a splash of cider vinegar, sautéed apples and a bit of chicken stock

This Weeks Recipes

Deviled Dates
Erin made these in her last Tapas class, and they were unbelievably good. Such the perfect combination of flavors, and so easy to make.

Chicken Pot Pie
Marian Burros' classic recipe. Usually a cold weather treat, but some times those comfort foods just can't be beat.

Cocoa and Chile Rubbed Pork Chops
Adapted from chef Tim Love's recipe from an old Food & Wine Magazine (2009), this delicious rub uses just a bit of sugar to help the meat brown. Cooked over low heat so the sugar doesn't burn, the flavor combination of cocoa powder and chile pepper gives this dish a wonderful depth.
