sassafras and instant espresso
spice and a chocolate enhancer
In the 1900's Sassafras, or filé, was made by the Choctaw Indians in Louisiana. This finely ground sassafras leaves became the key ingredient in "Gumbo Filé". This native North American plant has a pretty interesting history, even parts of the tree being outlawed. Suffice to say, only the leaves can be used in food now.
Instant espresso from Italy is the secret ingredient that can make chocolate sweets take off with flavor!

Split Peas
They might be dried, but they're fresh! From the latest harvest, these fresh beans make all the difference! Green split peas. Think split peas soup. I have never really successfully made a good split pea soup. My first attempt I rushed and kept to much oil from the ham bone stock. The second attempt I tried using ham, no bones. One time I got most everything right except the peas were off the bottom shelf of some grocer. They must have been so old they never really cooked up.
As you know, nothing beats a great split pea soup, just the right amount of salt and it's a slice of heaven!
