Imagine if you could have lemon panettone year round ... wouldn't that be grand! We do have at least one customer who freezes enough to last all year. For those of us who can't plan that far in advance or, like me, lack the discipline to refrain from eating any panettone within reach, we have the solution.

As you may have heard, we have a limited amount of "spring" lemon panettones. And, like cherries, garlic and avocados, we typically wait a full year before we "eat" again. Of course it doesn't mean that we don't salivate months before, the anticipation can often be crushing. It often feels like a weight upon our palette that only hands will satisfy.

This year, 2012, it is different, at least for one annual treat. Though it's only been three months since the last piece of Panettone French Toast passed across our plates, it seems like forever!

This past week, the spring cakes arrived and we dived in. A little piece of spring and a wonderful mixture of light sweetness, candied fruit, with sugar on top encased in a bread that takes 48 hours to make, brings up a flush of wonderful memories.

This bread, not just any bread, is really like no other. Even if it's roots might go back to the original fruitcakes of the middle ages, there is no modern day comparison to a panettone made in Italy. The lightness of being, this transition from winter to spring, this is the perfect way to say goodbye to winter and hello to a new year!

Marcona’s from Spain are perhaps the most flavorful, sweet almond that you can eat out of hand. Easy to consume, these almonds will work in any recipe you might have. Chef Erin in her last class, shared a very simple and easy to do recipe of Marcona almonds toasted in a pan with olive oil and freshly cut rosemary.

Almonds are the seed of the almond tree fruit. Across the world, almonds are consumed in various forms capitalizing on their distinct flavor and their ability to make you feel emotionally healthy. In China, hot milk is mixed with almonds and served as a dessert. In Morocco almond paste is used in pastry. In India they are used as an ingredient in classic dishes like "pasanda". And, of course, in Italy, almonds top their Panetonne.

Not only do the almonds make you feel good, this high-fat food is good for you! High in monounsaturated fats, just like olive oil, there appears to be a connection to reducing the risk of heart disease. In addition to these good fats, almonds are high in vitamin E and a great supply of magnesium, good for keeping your blood flowing. Almonds, like nuts, have good and healthy elements in them. Eat a handful a day and keep the grim reaper away.
