Honey is a passion of Eliza's and why we have such a wonderful selection. Not just sweet, and often not too sweet (try the Strawberry Tree), honey is more than a spoonful of sugar. When treated as an ingredient, the flavor nuances of honey can make the pedestrian, equestrian.

A dash of Bitters goes a long way in recipes like a pie, or use it to bring out the glow of a hearty stew. Finding the recipes from the 20th century using bitters is more difficult than one would think … but worth the effort.

Whoa, this is a pretty strange and unusual tasting honey! Sweet? Yes. It's the bitterness that comes along with it that feels like the middle of the tongue is being pinched together that is pretty wild. Think bitter melon, the enticing to eat fruit, if you acquire the "like", Strawberry Tree Honey is pretty tasty! This is not for the honey food novice it's for the honey lover who has tried everything.

Honey people know that there is something special about tree honey, that is, honey that is derived from a tree. At least in our experience, we have found that there is a distinct taste, not quite sharp and not quite bitter. It's an identifiable flavor that all tree honeys seem to have in common. This oak tree honey from Greece is a good one.

Sometimes you can be surprised. This honey is from a flower of the avocado tree. It's the flower that's really interesting, there is nothing quite like it in any other plant. It must be this unique transfer of pollen that helps make this delicious honey.

After this offering the next time we will be cutting the cheese will be in the fall, after the heat of the summer has subsided. Normally it's limited, this time it's really, really limited. Mina Green Harissa Green Harissa
Do you know Mina Red? You should. It's a great Harissa. There are many authentic variations of Harissa in North Africa, and Mina's is one version. We are now carrying his "green" version. Hotter than the red, it's very flavorful even with the added heat.

Honey Creme Fraiche Recipe
This sweet topper is so versatile, we decided to finally break it out as it's own recipe. Originally served on top of grilled peaches, it works just as great on top of a bowl of fresh berries or stone fruit, or as a sweet dipper for fresh strawberries. Basically, any place you want something to replace whipped cream. Heavier and richer -- but so much better.... If you can't find creme fraiche, you can use sour cream. I prefer the European style sour cream, but the runnier American style works fine as well. If too solid, then you can always thin it a little with a teaspoon or two of milk (or apple juice...)
