The Classic in Aspen
Food & Wine Magazine's Fabulous Event!
Aspen is all about food and wine. Really. And what makes it so spectacular and fun are the people; the people of Aspen who volunteer. The people from the Magazine, Devin’s people, the guests and the chefs!
Wine is very important to the weekend party, but for us it’s the food that makes it great. Actually, it is the food prep behind the scenes that we are allowed to see and participate in that makes the week culminating in the “public” weekend that makes it memorable.
Now, don’t get me wrong, on stage the chefs are spectacular. Creating recipes whilst they tell and share food stories is really great entertainment. And they are amazing. There isn’t a dud in the bunch.
So for five days the same behind-the-scenes culinary crew from all over the country comes together to prep, prepare and participate in the chefs' on-stage demonstrations.
For me, the interloper with a camera I get to be on scene for as many places as my breath (oxygen level is often compromised as Aspen is some 8000 ft above Sea Level) will allow me to. Running from one stage to another to photo while carrying a specific AllClad pan for the cook-off, a bottle of oil for Chef Samuelsson, saffron for Chef Batali, or Soy Salt for Chef Zimmern (look for his cool reading glasses!). It is all fun and a great way to see these Chefs in action!

Buckwheat
Classic Soba Noodles
Classic Noodles from Japan; Soba and Udon noodles. The main difference between the two is, Soba, is made with buckwheat flour and Udon is made from wheat flour.
Buckwheat, as we call it, is in fact not related to grass at all, but more closely related to rhubarb. The small triangular shape resembles the beech nut from the Beech Tree, and thus the name beech wheat / buckwheat.
This healthy seed/grain has the same if not better and more benefits of other whole grains, from fighting cardiovascular diseases, controlling blood sugar, and even fighting off post-menopausal women!
Buckwheat is a non-gluten food. However, these Soba noodles are NOT gluten-free as is common in making soba noodles, wheat floor is used as well – as is the traditional addition of yam. We will continue to look for a wheat free, 100% buckwheat noodle that we like.
It’s hard to explain why these noodles taste different or why we like them. But, hot or cold, classic serving ways, they are a joy to slurp!

Spicy Sweet Classic
Ginger Syrup
It’s pretty easy to make. (Three) Two basic ingredients and a little time and you are done. Getting good ginger can be the biggest issue.
Like all simple syrups, ginger syrup has become a staple for many bartenders. If you think of cocktails, it’s the natural match for ginger syrup. The go to simple syrup for many.
It’s also awesome in club soda and lemonade! A blip into a mustard vinaigrette, add it to breakfast pastries, pound cakes, top yogurt and waffles. Or just make your own ginger ale. Think fruit with pits and ginger syrup matches nicely. I am not sure if this will match the fabulous Reed avocado, but I am going to try it!
Some of the most simple things can be divine! This simple simple syrup is!
