Stock your pantry for the season

Though you may not be in school, or even think about school in the fall, it does affect us all. School busses, or hordes of kids all at the same time on the subway.

Though the kids on the street might be less, the cars for the colleges and universities increases. Moms and Dads dropping kids off perhaps for the first time or the last, lots of tears from grade school to graduate…

What does all this mean? It means baking season has begun. For you planners it’s time to get that plan in action. First up is to stock up with the top ten secret ingredients to help you rush to the top of the class!

We have many hard-to-find ingredients, ones that are typically only found in commercial bakeries, and some just plain good ‘ol stuff. And, if you can't find it, but you are looking for it, let us know and we will see what we can do. Sometimes, it's better to have arrowroot than substituting with cornstarch. Or vanilla powder, when you need vanilla without liquid or bean. (One gram of vanilla powder is equal to one bean!)

Recipes old and new, twisting and turning it up like Balsamic vinegar peachy crusty pie or the old standbys like a simple muffin dressed up with a touch of fancy sugar!

The very simple act of eating a hot out of the oven muffin is hard to beat. Sometimes a muffin is the best thing to make. Gather, assemble, mix & bake. This is one of the very first recipes that I ever followed and made. There are better ones, yes of course, for a muffin, but I love this one. And that’s what baking season is all about, love.

They make the world go round!

It might be too early to start your holiday cookie baking gifts. Yet it's the perfect time to test that new ingredient, idea or recipe so you will be ready! There are never enough cookies in the world!

The importance of getting nutrition in everything we eat now is so important. Calories build up without an ounce of value! So when making a cookie be sure to only include the things that are essential. Here is a short list:

Butter; let’s face it, butter makes the world go round, and it is essential to baking (or substitute with coconut oil).

Lard; though the two (butter and lard) are somewhat interchangeable, really you need both and lard can do things butter can’t!

Chocolate; everything gets better with chocolate.

Almond paste; like candy in a form you can play with, make an almond cookie, or mix it in. Better yet, keep it nearby to snack on.

Organic Vanilla; 2x (twice the potency), extract, ground and paste, it’s really the best!

Cinnamon; bark or ground, its distinct flavor with just a pinch or sprinkle can make a cookie a cookie.

Candied fruit; these are so good we eat them right out of the bag, sticky fingers and all. Chop them and add them to the top or in the dough and it makes everything awesome.

Make candied lemon peel once, and you realize how great it can be. Do it right and you know that it takes time, lots of time and lots of space. The results are always enjoyable if you can get the correct lemons when you want them.

On the other hand, when the peels come in from France, we can't but all eat a few (testing, we are always testing) just to ensure our memory is still working. These peels are the best we have tasted when it comes to price to volume.
