Pooh! The Jar is Empty!
Sometimes, there is nothing worse than anticipating a wonderful cup-o-tea, just before bedtime, and finding there is no honey in the pot. It happened to me last night before I settled in to write. It changed the prose I was to compose, stopping my brain and turning my words, well, quite lame.
Okay, enough of this nonsense. I now have about five jars of honey, all at the end of their usefulness, only the crystallized dregs are left and it's time to restock. Now, we replace our food a little differently than most. We choose from the jars we've been experimenting with at the office, and take them home to put them through Real Kitchen use. We use them like anyone would. We find out if we actually really like them, if they work in every recipe (or not), and what to do with them (or not).
It's pretty interesting. Real Kitchen is very eye opening. Take honey, for instance. There is rarely a honey that we all love.
And I have learned that honey in your tea is more than just that. It is a combination of leaves and bees that makes the write prose.

Mulled Damson and Port Jam
To the nose its got a tang and a bit of tingle. I recognize the notes, the "smell", but I can't put my tongue on it....
To the buds it is lip sucking, tongue smacking fun. The cinnamon is just right giving the overall feel a nice twinge and the citrus leaves a nice overall upper cheek twang! It's smooth with little chunkies of citrus peel!
Even though it is for a good piece of toast or a deconstructed PB&j, you could easily eat the whole jar with just a spoon! It is that good! It just might be one of the all time faves!
A damson is a fruit with an English name, small, a deep dark purple, like a plum. Damsons are all over Europe, though the damson is native to Great Britain.
Originally Port was a wine aged in Oak barrels fortified with local brandy to keep from spoiling during transport from Portugal in the 18th century. This added alcohol stopped the fermentation process, leaving more residual sugars and thus creating a sweet wine. Made and stored this way until 1986.
Add lemons and oranges and a wonderful jam is produced!

Spicy Toasted Corn
Corn with some heat! Fun!
The “Spicy Toasted Corn” is just that. Crunchy first, and while you are crunching, the hot Habanero zips right on by the comfort zone and, while tingling the tongue, there is a rise of heat that touches the nostrils and swells the upper cheeks.
It’s not like those chips slathered in a pile of stuff that is spicy but not hot. And when you are done, the kernels love you with a tasty feel, not a chemical attack. If you like hot these are for you. If you don’t, probably not.

Skin on Marcona Almonds
When you take a look, at first they look like someone made a mistake and fried them too long.

Sparkling Wine Vinegar
In the beginning of time, at least for this vinegar, it was named Champagne, as all vinegar of this type which came from a wine with bubbles. And then Albert had an epiphany, the sparkling wine didn't come from Champagne, France, instead it came from great sparkling mostly Chardonnay wine in Napa. He felt it wasn't right and he changed the name to Sparkling Wine Vinegar.
The result was a vinegar that took off! And Chefs all around the region swooped it up. This is a wonderful, versatile, full of flavor vinegar.
Champagne or Sparking Wine Vinegar is considered the lightest of vinegars, and that usually means a bit more acid on the tongue and a light flavor of the base "champagne" remains after production. This delicious sparkling wine vinegar is made slowly, the old fashion way, and that means it's full of flavor.

Sea Salt from Trapani

This salt comes from the western Sicilian coast. From Marsala up to Trapani, protected salt pans have been used to produce coarse sea salt for millennia.
The salt is extracted by the natural evaporation of seawater. Passing through a series of big basins, the seawater evaporates and leaves salt.
The salt is then raked and dried under the hot Sicilian sun.

Grilled Pork Tenderloin with Chocolate Spice Rub Recipe
This recipe was inspired by Megan and her quote in this year's issue of the Saveur 100 (Saveur Magazine - January, 2010). It is a nice twist to a more traditional pork tenderloin, and will produce beautiful results if you prepare and grill the loin properly.
You can adjust the size of the tenderloin, depending on how many you are serving. This recipe will easily work for smaller or larger tenderloins. Any remaining rub can be stored in a container in the fridge for up to two weeks.
Cocoa & Curry Rubbed Chicken Salad Recipe
This is a combination of a few different recipes. The combination creates a perfect summer main dish - lots of flavor, not too heavy, fresh greens that are so abundant in the summer. In this case, we recommend slicing the breast and serving it cold atop your favorite greens dressed with a simple vinaigrette dressing. As with many simple recipes, the better the ingredients the better the outcome.
Roasted Cauliflower with Cocoa & Smoked Paprika Recipe
This is an adaptation of a brilliant recipe convinced and codified by Shauna Ahern (www.TheGlutenFreeGirl.com). She likes to blanch her cauliflower first, but I just put the florets straight into the oven on a shallow baking sheet. You have to roast them a little longer and be more careful to not burn them. But other than that, they turn out lovely every time.
