In just a few days our chimney will be cleaned by a large man's body in a red suit.

And our stockings will be filled with food.

The symbol of “the gift” is important. And it is not about wealth or even prosperity; but love, caring, sharing, hope, and the perfect food. It could be fruitcake, it could be nougat, or it could be something as simple as bean dip. Because the making of the dish itself, any dish, is the gift.

The holidays are magical, they are about toys coming alive. And they are about family. Not just blood, not just in-laws; they are about friends, extended family, and the family of man (the gender neutral “man”). The man which originally referred to both species, aka male and female.

It has been a year of redemption, conflict, and hope.

For us it’s Christmas almost every day at ChefShop.

Everyday we open boxes filled with new foods to try. And it is truly exciting when we do get to try something that blows our mind (and our palette) away.

Food, like love, isn’t logical, it’s magical.

We truly feel lucky to have great food to try and to eat. We are thankful for the producer, the farmer, the hunter and gatherer who shares their passion with us.

It has been a great year of new found foods and as the world becomes more mechanized and more industrialized, it seems that more passionate personal-made foods appear.

And we are thankful for all of you. You who share the love of food. From your emails, to the conversations in the store about what to make next - or what we made yesterday. From failures to successes, it is all about how food is, indeed, US.

We are positive about the future.

The brief history of the gift started with the passing of a thigh from the recently found wooly mammoth to the neighboring village. Then gifts came in the form of good luck. Then the giving of land and a cow. Next Gift Certificates were offered in the 30’s from big department stores. Though they were only to be offered to the very best customers.

From conversations with gift recipients in the shop we find so many people overjoyed with their certificate for food. Chocolate Covered Cherries I want to tell you a wonderful love story,

Once upon a time,
it was Christmas in Paris, 1928. They hadn’t seen each other in years, in fact almost 38 years had passed, and in that time their lives had switched around and they lost contact.

To say both were not extremely apprehensive would be an understatement. He had moved on to raise a family stateside after school, she had stayed to work many jobs, eventually opening a bookstore for obscure, out-of-print French literature.

Flying into Charles de Gaulle had been a multi-leg trip that seemed to last forever, though the ride into 251 Rue Saint-Honoré had been quick enough to allow the 40 minute walk to the café where they would meet. He was thankful for the brisk night winter air to clear his mind, oblivious to the fact it was barely zero c out.

She had chosen her seat carefully at the café table so the lights of the holiday would twinkle in her eyes and she could watch the door. She spotted him as soon as he was close, walking in a classic pea coat. She anxiously checked him out, her eyes darting around, finally wresting with anticipation on his hands.

He spotted her twinkling eyes as soon as he opened the door. She had not changed one bit, perhaps the night light and his failing eyes contributed, or perhaps it was anticipation. He saw nothing that would ease his racing heart.

As she stood and they French kissed, no wait, Faire La Bise (cheek kissing), he sniffed big and was pleased that there was no smell of contraband.

“Where is it, is that for me?” she said indicating the brown package in his hand as they sat awkwardly down. He always liked that about her, to the point. He responded not answering her question but with a question of his own, “Where is yours?”.

She pushed a small package with her foot towards him as he handed his package to her. Smiles erupted simultaneously.

Kishibori Shoyu Soy Sauce

10 Times More Antioxidants Than Red Wine

Soy sauce (Shoyu in Japan) has been around for close to 2,500 years. Made almost everywhere in Asia, the most familiar varieties are made in China, Japan, Taiwan and Indonesia.

Soy sauce is considered a "crucial" ingredient in most Asian cuisines. Not only does quality soy sauce enhance flavors while contributing an earthy flavor to whatever dish you are preparing, but traditional, artisan-produced, dark soy sauce also contains 10 times the antioxidants of red wine, and helps with the prevention of cardiovascular diseases!

There is reason to be concerned about what type of soy sauce you use. Like miso, traditionally brewed shoyu is a fermented soy (and wheat) food, so it has many of the same nutritional properties.

The natural fermentation process converts soy proteins, starches and fats into easily absorbed amino acids, simple sugars and fatty acids.

A recent study by the National University of Singapore reports that the dark soy sauce has antioxidant properties that are 10x more potent than red wine, and 150x more effective than vitamin C. It's the high concentration of brown pigment in shoyu that is thought to contribute to its strong antioxidant and anticancer properties. Shoyu is also said to aid in digestion and be rich in minerals.

This is our "go-to" shoyu / soy sauce. Complex, rich in flavor and it opens the palate up to experiencing life like you want it to.

Oatmeal Organic Stone Cut from Scotland
Back-in-Stock! Oatmeal of Alford is back! Just in time! (Diet season is around the corner).

The unusual flavor and texture of these amazing Scottish pinhead oats may be attributed to the final drying process, carried out in the old fashioned 'flat kiln', which is believed to be the only one of its kind used in Britain today. The oats are dried in the kiln for four hours, during which time they’re turned twice by hand shovel.
