Love Cocoa by James Cadbury
Great-great-great grandson of John Cadbury
Yes that Cadbury. A quick history of the Cadbury family.
In 1824, John Cadbury opens a grocery shop, and, being a Quaker, did not sell alcohol. Instead he sells tea, coffee and drinking chocolate. In 1831, he opens a factory to make cocoa and chocolate. In 1866, the second generation goes to Holland to buy an innovative and new cocoa press.
The press squeezed out much of the cocoa butter from the beans, so it wasn't necessary to add starches with brick dust being commonly used at the time!
This resulted in the launch of "Cadbury's Cocoa Essence", the UK's first unadulterated cocoa, marketed as "Absolutely Pure. Therefore Best".
This helped transform a small business into a worldwide company.
As the company prospered, they outgrew the factory in Birmingham so the brothers looked for a new location. To find a clean and healthy environment, a "factory in a garden" for the employees.
In 1905, Dairy Milk Chocolate is made. In ten years Cadbury's milk chocolate was its best seller and what it became known for.
Cadbury then built a village called Bournville with over 300 houses for the employees. They also rallied for old age pension and against sweat labor. George Cadbury started a pension of 60,000 pounds in 1906 to ensure his workers would be taken care of. He also donated much of his wealth to hospitals, charities and the employees.
By the time James Cadbury was born in 1985, the family was no longer involved in the Cadbury Chocolate. In 2010, there was a hostile takeover and the chocolate was lost to big manufacturing.
James Cadbury started Love Cocoa based upon the Cadbury family values and now includes sourcing single origin, organic, fairly-traded cocoa and giving money to the workers.
The chocolate is good. So good, in fact, we can't wait to have more!

Honeycomb and Honey Milk
Chocolate Bar
What a wonderful surprise. Even though the name is inviting, one doesn't quite know what to expect.
It is a wonderful milk chocolate on the front and when you roll it over there are bits and pieces of honeycomb sporadically scattered about. It is fun that every bite is just a little bit different.
The bite is soft and an en-joyous mouth feel. It is as you might imagine and also full of surprises. It is indeed a heavenly feel of milk chocolate, exactly how you want milk chocolate to be. Rich, smooth and milky.
And the crunch of the honeycomb is also just about right. Adding a hint of sweet crunch makes the bar and the bite a delightful twist to what you desire.
It took over half a bar in little bites and a whole lot of constraint to not consume the whole thing. Sharing is important to do, especially as the world as we know it is changing, even when it comes to chocolate.

I love sprinkles and I love white chocolate! Look at this bar!! How perfect is this!!!
With sprinkles of color interspersed in the bar (not quite like the packaging), they create a crunch that is delightful!
The white chocolate is as good as any we have had before. With the crunch of the "sprinkles" it's quite perfect. It has been claimed as "great!" and "the best bar we have ever carried"! The bite is soft, gentle and melts just right.
One could easily choose this white chocolate as the go to white chocolate bar. One in your pocket could lead to one every day if you are not careful!

This dark chocolate has juniper, lemon and lime blended with a 70% single origin, organic fair trade chocolate. And a Great Taste Award Winner!
Without crunching, the tongue detects flavor, and when you do bite in the flavors expand. A strong juniper flavor comes with a citrus twist aroma. You feel surrounded with a dark chocolate and a bit of dryness over the top of the tongue to finish.

Quinoa - Red, Black and White
and recipes
Why eat red, black or white? Many articles debate this at great length. Almost all come to the same conclusion, that the only difference (between the options) is to choose which color makes a prettier plate for dinner.
And it is true, red quinoa and black can make green and yellow veggies “pop” on the plate! But the often stated conclusion that white (and for that matter all quinoa) are the same isn’t quite true. Not only does taste vary between white (or golden) options, red and black might just be the best option.
Research has been showing that the more color in your food means more good stuff for your body. And in this case it appears that quinoa with color can you give 15% of your “daily requirement” for riboflavin.
Not sure you should care about Riboflavin? Otherwise known as Vitamin B2, this important vitamin often helps keep the painful red tongue, cracked lips, itchy bloodshot eyes, and cracking mouth corners away. It is also believed that a deficiency of Riboflavin effects the blood and the ability to absorb much needed iron for your body, the lack of which can result in a cascade of potentially evil issues.
Now, should you go out and only eat red or black quinoa? Of course not. You can get vitamin B2 from many food sources including dairy, eggs, green leafy veggies, nuts and legumes.
Keep in mind that though Quinoa is also fiber healthy, it has iron and magnesium and antioxidants. It is a complete protein (amino acid rich) and is a great food for gluten free, vegan eaters. Because it is such a superfood you should make sure it works for you.
But the very best reason to eat this seed (not a grain), is that it is as easy to cook as boiling water! The very basic, basic cooking instructions are these. 1 part quinoa to 2 parts water. Boil water, rinse quinoa to remove the natural saponin (natures bug repellent), add quinoa to pot and then simmer, covered for about 15 minutes. Remove from heat and let sit covered for 5 minutes, fluff with fork and make a dish. It works well with just about anything, from pasta sauce to veggies and protein.

Elderflower Syrup
Fabulous in mixed Drinks
And ice cold water. We need to consume water to be healthy, sometimes water gets tiring to drink.
Add a giant splash of Elderflower syrup and you get water that doesn't taste like water and that doesn't taste like a sweet syrup, either. It is wonderful and my go to drink when I"m not having coffee or tea.
This D'Arbo Elderberry Flower Syrup is delicious. Lightly sweet, syrupy, and amazingly good. Tastes like St-Germain, only without the alcohol. Same delicate, floral notes. Perfect as a dessert topping, in a French Gimlet with Elderflower Syrup cocktail, or atop an Orange Panna Cotta.

Use this for almond croissants, almond cakes, almond frangipane, almond skordalia. Or use as we often do, with a spoon or fork. It's a treat to eat.

French Onion Soup

French Onion Soup with Potato Chips! Much easier to make than you can imagine. It’s what I am eating right now. It’s like comfort food from high school. This is a short story (going back in time) about a high school date that didn’t go exactly as planned.
We went to a very famous, fancy French Restaurant to specifically have French Onion Soup. The soup was fabulous, in fact, the very best I have ever had. The cheese was done to perfection, which I have figured out since then, is the hardest part to get right.
I remember the soup, I don’t remember anything else, actually. I don’t really remember who I went with either (sorry, I am sure I really cared about you), and I apologize for the over-sized sport coat and being such a klutz.
And no, it didn’t have potato chips. The French onion soup I am speaking of now is mostly sour cream and Lipton's dried French onion soup mix. Not exactly a soup and certainly not the soup I remember from the high school date.
But, as a dip, for Ruffles with Ridges potato chips, it is fantastic! And so what that it is filled with chemicals, my theory is that some chemicals in the body preserve us longer. (I seem to do this every decade or so and now seems like a good time to exercise a fond memory and eat some comfort food.)

Amazing Apple Cider Vinegar
This Katz Gravenstein Apple Cider Vinegar is a revelation, a vision, a lightening bolt of amazement! Yes, it’s just vinegar, but a little sip with just your lips and you can taste the sweetness, the shape, the roundness of the apple...you can taste the apple!
It makes you realize that you don't need to have industrial grade cleaner apple cider vinegar in your body.
I called Albert to ask him why his was so amazing, and though he is never shy to say how much he likes his stuff, he never says it’s his “hands” that make it great. (It is!) Za'atar with Hyssop
Hyssop has amazing health benefits!
Za’atar is old. Very old indeed. Ancient Egypt old. And Holy old, as Origanum syriacum, an aromatic perennial herb in the mint family, also known as Biblical-Hyssop, Lebanese oregano, Syrian oregano, wild marjoram.
Za’atar, Zaatar, Zatar are all commonly used names for a spice blend that contains sesame seeds, dried sumac, salt and Za’atar (hyssop). Other chosen ingredients have varied over thousands of years.
The recipe for Za’atar (as a spice blend), like Harissa, fried chicken, baked beans, vary from culture to culture, place to place, family to family, the recipe is often held close to the chest and only shared when eaten. Throughout the area that composed the fertile crescent, Za'atar has been a staple.
Perhaps the most interesting element here is that the herb hyssop has an ancient, a biblical and a current use for a healthy life. In very recent studies, in 2014 and 2017, herbs in the Lamiaceae family, of which hyssop belongs, may fight cancer cells and hyssop specifically may attack breast cancer.
Hyssop has also been identified to help with these health issues: digestive track, liver, gall bladder, intestinal pain and help with ulcers. Interestingly, it may also help with asthma, the common cold and respiratory infections. It is also used for UTI’s, poor circulation, HIV and menstrual cramps.
In a more important study there is evidence it might delay the aging of your skin!
Classically it is added to flat breads with olive oil, like manaeshe, naan, roti, paratha, though really you can use it on any bread you desire. Or you can mix with an olive oil, like Desert Miracle, into a paste to spread on or dip chicken.
Mehdi has chosen this harvested and blended Za’atar because it is made by Palestinian and Israeli women working together in peace to spread the love for common good.
There are no scientific human clinical trials, just studies from different parts of the world including here. And of course, thousands of years of use. There is enough evidence that there are cautions associated with hyssop to not overindulge. Most of these warnings are related to the hyssop oil and its excessive use. Caution for those susceptible to seizures and those who are pregnant should not indulge.
Think of it not as minty, but more like herbs you would put in a tomato sauce or a light toss on your next omelette. Once you find a home for it, it will be tough to live without it!

Basic Chocolate Syrup Recipe
Easy, quick, satisfying. In minutes you can make this and it's ready to use. Stores for a day or so, though it is much easier to use when it is still warm. Drizzle or spoon, it works well and tastes so much better than what you can find "pre-made".
Almond Creme (Frangipane) Recipe
This recipe came from our friend and Pastry Chef Jesse. Use this almond creme filling when making almond danish, croissant, or fruit/almond tarts. This almond creme filling would go under the tart's fresh fruit topping before baking.
Blue Cheese Mustard Chicken Recipe
This recipe starts with two butterflied chickens, broiled until they are just short of done - about 10 minutes on the second side instead of 15 minutes. They are then coated with a delicious blue cheese mustard sauce and bread crumbs, and then broiled for another 10-12 minutes. Pretty easy - if you know how to butterfly a chicken....
