An Abundance of Goodness!
On a recent trip to the market I was greeted with piles of pears and lovely local apples, bins of beautiful Brussels sprouts, fabulous fresh fennel and more – all calling me to load up my cart.
To my mind, there’s nothing more delicious than a perfectly ripe pear, but if you’re looking for a dessert to serve to guests, the Pear, Pecan, and Chocolate Crumble recipe is a wonderful way to showcase seasonal pears.
Similarly, I love the crunch of raw fennel in salad, or roasted in the oven and served alongside just about anything, but an elegant fennel soup will be perfect for my annual (almost annual, thanks COVID) book group holiday gathering. Brussels Sprouts with Caper Mustard Butter

This is a variation of a recipe from Deborah Madison's cookbook, Local Flavors - Cooking and Eating from America's Farmers' Markets. This is my favorite Debrorah Madison Cookbook. An essential cookbook for every library!
The original recipe calls for traditional Dijon mustard, but we have tried it using every Edmond Fallot Mustard we have and it is always absolutely fabulous.
It's good on all green veggies, just be sure to let the butter melt on the cooked vegetables right before serving.

Recca Pantescan Salted Capers
Non-Pareil
Recca capers are grown on the island of Pantelleria and preserved in the native sea salt by Agostino Recca. The island of Pantelleria is 70 km away from Africa and 85 km from Sicily. It is considered by many culinary aficionados as the ultimate source for capers.
These are small "non-pareil" Pantescan capers, full of flavor. Being preserved in sea salt means that none of the aromatic flavor has been lost. A fabulous find indeed!

A Flavorful Dose of Goodness
Gomasio - Furikake!
Gomasio is sesame seeds (goma), kelp and nettle.
Landsea Gomasio is the creation of a resident of Orcas Island in San Juan County, Washington.
The island is about a 1 hour 45 minute drive north of ChefShop, and then a 1 hour ferry ride to the island. Orcas Island is the largest of the 172 named islands & reefs in the San Juans. It is one of the most beautiful places you can visit in the world.
Brooke, the owner of Landsea Gomasio, found an abundance of bull kelp and nettles on the island at the same time she met a neighbor who taught her classic Japanese cooking. It was in these friendly cooking moments that Brooke learned about gomasio.
We asked Brooke how she came up with her own personal blend and she told us:
“I realized this classic blend would be the perfect starting point from which to incorporate some of the nutritional wealth of the land and the sea. I replaced the salt with the more complex salinity of Bull Kelp and the bright note of Nettle. The result is Landsea Gomasio; a blend that supports the body with both the wisdom of tradition, and the nutritionally rich flavors of my home.”
What do we love about this furikake? The kelp, imparts the salty sea and the nettle adds a hint of vegetable. Along with the sesame crunch, it is more like an ingredient than a spice. Imagine frying a nice fillet of fish with gomasio on the flesh side or topping your morning eggs and potatoes.
It adds an additional layer of flavor and a lot of healthy goodness at the same time.
If you like furikake, you will love this Landsea Gomasio. My favorite way to consume it is to pour a little bit into the palm of my hand and toss it back into my mouth! This is my go-to nighttime snack food.

This is the most interesting salt.
Kala Namak!
Though it finishes with saltiness, this salt starts with egg. That’s right, egg, or more correctly the sulfur (iron sulfide) compound that transforms the salt.
And if you don’t know that's what's coming, your taste buds instantly will, and they send emergency alerts racing out the back of your mouth on an impulse nerve to your gustatory cortex to panic you that what you are tasting is spoiled.
But, then something else happens and you reach for another crystal to taste, just to confirm what your gustatory cortex is telling you. This time though, because you expect an eggy taste, you also taste an explosion of vapor, if that makes any sense at all. And the salt comes alive, as a partnership of elements which surprises and pleases, yes pleases, your palate!
Kala Namak is also known as Indian black salt, Kala Loon, Himalayan black salt, and Sulemani Namak. The color of the salt ranges from brownish-pink to dark purple after it has been ground.
Kala Namak starts as a halite, commonly known as rock salt, and is mined from the Himalayan salt range. The halite is put through a reduction–oxidation reaction; this is any chemical reaction in which the oxidation number of a molecule, atom, or ion changes by gaining or losing an electron.
Our Himalayan Black Rock Salt is mined in the Indian subcontinent and is in its purest form, without treatment or any refinement process. Packed with 84 essential minerals, it is black after the reduction-oxidation reaction and turns the red-purple color when it is ground into a finer salt.
Long considered a cooling element in Ayurveda medicine, it is used as a digestive aid and for heartburn. Lower in sodium than many other salts, it is a good option for those who need to watch their intake of sodium.
Use it in chutneys, Chaats, salads, and fruits - in almost any dish. The salt can be used with tofu to mimic eggs for your vegan friends or mixed in (or sprinkled on top) of an avocado (which is delish!). Kala Namak (despite its egginess) is quite versatile. Use it almost everywhere you salt today (including your bath water!).
This is one palate pleasing pleasantly performing salt!

Organic Stone-Cut Oatmeal
from The Oatmeal of Alford in Scotland
Every list of “super foods” has oats near the top. You’ve seen the commercials - eating oats is known to lower cholesterol and improve cardiovascular health. Oats are an excellent source of fiber and they even help stabilize blood sugar - at any time of day.
The unusual flavor and texture of these amazing Scottish pinhead oats may be attributed to the final drying process, carried out in the old fashioned 'flat kiln', which is believed to be the only one of its kind used in Britain today.
The oats are dried in the kiln for four hours, during which time they’re turned twice by hand shovel. It is this very specialized process, perfected by the miller, which makes the flavor and texture unique.
The distinct oat grains are then stone-cut into small pieces - smaller than Irish "steel cut" oats - thus the name “pinhead.” Unlike “old-fashioned” oatmeal, they’re not steamed and rolled flat.
As part of a low fat-diet, oatmeal can help reduce cholesterol levels, and it is a natural food which contains NO additives, preservatives or colorings.

"Reminds me of B&Bs in Scotland. Easy and surprisingly quick to prepare and almost toasty/ nutty. If you do toast them before cooking for a few minutes in a 325 oven or on the cooktop in a heavy pan, they are very nutty and extra flavorful. Add raisins or other dried fruit just before they're done and you'll have a wonderful start to your day."

Stovetop instructions work well, although we sub out some of the water during the initial cook, and sub in the same amount of milk after cooking and just prior to serving. Five minutes has not been enough cooking time, but it's worth every extra minute and every penny!"

As most everyone knows you must order early if you have particular flavors you can't live without! And remember, we do not charge until we ship!
We have 7 new Panettone this year. As with all new product we always proceed with caution. So there will be extremely limited supply of the new ones (the ones without pictures).
With the uncertainty of how shipping will go this year, we can delay shipping your orders to some degree. If we see or hear of bottlenecks in the shipping lanes we will be shipping to ensure items arrive in time for your holidays.

This Dutch process dark unsweetened cocoa powder is in a class unto itself. We have removed less fat from our cocoa (22-24% fat content), which results in a more intense and immediate chocolate flavor, and our wonderful Dutch cocoa powder has a touch of ground vanilla bean. Our regulars know what a great cocoa this is!

"I have been using this exclusively for years now. I have a 'secret' brownie recipe that I make with cocoa, syrup made from the cocoa and only the best ingredients. Everyone goes ga-ga over them. Syrup - so easy to make - anything that calls for cocoa I use this. Sometimes I mix just a touch into my coffee for a treat. If you have not tried this yet you need to. You WILL NOT be disappointed!!!"

Honey and Katz Apple Cider Vinaigrette Recipe
Walnut oil and cider vinegar are a natural pair and they are taken to new heights by the addition of citrus honey. This Honey Apple Cider Vinegar Dressing is particularly good over salads of hearty or bitter Spring greens.
Try it on a combination of watercress, mâche, arugula, and radicchio with some chunks of caramelized apple and toasted walnuts as a garnish. - With these hearty greens, I would use La Tourangelle Roasted Walnut Oil, but if you are using it for lighter greens I would use the Maneyrol Lightly Roasted Black Walnut Oil from France.
Pasta with Pesto, Green Beans & Potatoes Recipe
This is a classic Italian pasta dish - perfect for the early fall when the potatoes and beans are coming into the market and you begin to have a hankering for heartier fare. Although it is traditionally made with Fettuccine, any long pasta will work - including La Romagna Pappardelle.
In this case, the recipes calls for walnuts, as well as pine nuts. If the pesto becomes too thick, you can use some of the pasta water to thin the sauce. You should be careful to add the liquid a little bit at a time - after you have combined the pasta, pesto and veggies together.
