The word Chai
means “life”, alive, living, and as far back as medieval Spain, the symbol (of life) was worn as an amulet.
In
France, Chai (pronounced shay) means a wine “shed” or place to store wine above ground.
In India, Chai, \chi\ derived from
Chá (Chinese and others), means tea. And in Indian cooking, the word Masala means spice mixture made into a paste or powder, such as chicken masala. Thus Masala Chai is a spiced dark tea.
Jaipur Avenue Masala Chai is more than the blending of the ingredients; it is not just a random mix. In fact, it is about finding perfect harmony to create the smooth balance that makes this a very special calming, blissful chai.
The creation of
Jaipur Avenue Chai started with an expat from
Mumbai, India who was an accomplished textile designer for Oscar de La Renta in NYC that missed the Chai from “home”. Now a Seattle resident, Jillu found it harder and harder to find the time to make Chai in her new “home”.
When she found out that her husband’s high school friend had created an all-natural, instant, just-as-good as the freshly brewed homemade chai, she quit her job at Nordstrom and started Jaipur Avenue.
The aromatic spices are not random and are chosen in accordance to
Ayurveda, the 5,000 year old system of natural healing; the spices chosen have purpose and are rich in antioxidants with health benefits. Like all foods, the origins are as important as the taste themselves!

Salted Caramel Milk Chocolate
The first bite is wonderful with an aroma cloud you can feel! Soft, gentle, rich, melts deliciously and with caramel notes. When you bite you get a tiny crunch of salt. It has a wonderful finish. You smack your cheeks, sucking them in to get the last of the chocolate (flavor) so you don't miss anything!
Take a couple of bites and then suck with your tongue to the roof of your mouth, then bring in your cheeks for an enveloping chocolate exposure! What a blast from a bar!

Maldon Sea Salt Dark Chocolate
To the tongue you get the 70% chocolate feel, with some nice floral notes and citrus. At the first bite you get a good bite and you search for the salt.
The salt comes at the end, as if the salt is hiding to pop out on the tip of the tongue. You can almost hear the salt when you take a bite and the salt taste comes late in the process.
Like his milk bars, this dark chocolate bar is wicked fun to eat! A couple of bites and then a melt and a bit of the dry edge that a good dark chocolate has.
What a mouth smacking exploration finish as you hunt around in your own mouth to find the flavors hidden in every orifice that you may never have paid attention to in the past. The chocolate lasts in such an enjoyable way.

Cardamom Pods
Whole Green
A whole green cardamom pod (Elettaria cardamomum) is an indication of very high quality, as it is difficult to buy cardamom pods in such a pristine state.
Whole green cardamom pods are as esteemed as the seeds they contain: many pilafs, curries, and other hot dishes call for whole cardamom pods to be added.
It slowly infuses the dish with its essence, and the shell disintegrates as it cooks.
It is also a necessary participant in the ritual of Arabic coffee. It is added to the thick, sweet drink as it steeps, and the gesture of serving whole green, unblemished cardamom in coffee is an indication of very high esteem for the guest. The guest returns the gesture by drinking several cups of the brew.
This is a very common ingredient in home brewed Chai.

Whole Cloves

These unopened buds from a tropical evergreen tree belonging to the myrtle family are used to flavor a multitude of dishes both, sweet and savory.
Cloves have historically been one of the world's most important spices, in demand in any number of world cuisines.
It is a main player in Indian and Asian spice mixtures, and appears in Mediterranean dishes as a primary seasoning for meat and poultry.
Its European applications include mulled wines, gingerbread and other sweet baked goods.
It is also commonly used with fish, tongue and pickled foods. The assertive, dark aroma and sharp, peppery taste mellows well with sweet flavors, especially when cooked; try it with apples, sweet potatoes, cranberries and beets.

Ground Ginger

One of the most fragrant and distinctive spices and a natural for holiday baking, ginger is full of possibilities year-round.
Add a couple of pinches to stir-fries, sauces for meat or chicken, or stewed fruit or applesauce. It's also a common addition to savory Moroccan dishes.
A must, of course, for ginger snaps, gingerbread or any spice cake, ginger also pairs well with chocolate; try it for a little added kick in cakes or cookies. And your next cup of Chai!

Stop and eat the Rose (buds)
The rose is one popular herb! Perhaps not here in the Northwest, but to 100’s of millions in other parts of the world, it is part of the regular garnish. Use the complete bud or get these for the best petals.
To be clear, the roses you get for your birthday from the local florist are not the ones to eat. Those have been grown and sprayed with chemicals. If you grow your own, without fertilizers and they smell great, chances are they will taste great, too.
Rosebuds, not to be confused with Rose Petals, are used a bit differently. Think Rosebud Tea. (6 grams of Rosebuds steeped with lemon verbena for 8 minutes, add honey to taste). There is some belief that the rose can heal and help your physical heart.
It is common knowledge and proven that the emotional heart can be elevated with just one of them.
Of course, you can mix gin, vermouth, elderflower, rose water, shaken not stirred, and topped with a rosebud in a martini glass. It’s another way to elevate one’s spirits.
To finish the day, make Rosebud Milk Tea. Add 1/2 cup hot milk and 1/2 cup hot water to loose leaf rose tea with sugar or honey, topping with a few buds. Luxurious! Time for a snooze!

Just Harvested Nettles
A flavorful dose of Goodness
Gomasio is unhulled sesame seeds (goma) and salt (shio).
Landsea Gomasio is a new creation of a resident of Orcas Island in San Juan County, Washington. The island is about a 1 hour 45 minute drive north of ChefShop, and then a 1 hour ferry ride to the island.
Orcas is the largest of the 172 named islands & reefs in the San Juan's. It is one of the most beautiful places you can visit.
Brooke, the owner of Landsea Gomasio, found an abundance of bull kelp and nettles on the island at the same time she met a neighbor who taught her classic Japanese cooking. It was these friendly cooking moments that Brooke learned about gomasio.
We asked Brooke how she came up with her own personal blend and she told us,
“I realized this classic blend would be the perfect starting point from which to incorporate some of the nutritional wealth of the land and the sea. I replaced the salt with the more complex salinity of Bull Kelp and the bright note of Nettle. The result is Landsea Gomasio; a blend that supports the body with both the wisdom of tradition, and the nutritionally rich flavors of my home.”
Brooke came into the shoppe, jar in hand, and asked if we might be interested. One taste and it was a big YES!!! Even though we already have furikake, similar but different, this really fills a different place.
Because of the kelp, a salty sea is imparted and the nettle adds a vegetable hint. Along with the healthy sesame seed crunch, it is more like an ingredient than a spice.
Imagine frying a nice fillet of fish with gomasio on the flesh side or topping your morning eggs and potatoes. It adds an additional layer of flavor and a lot of healthy goodness at the same time.
If you like furikake, you will love this Landsea Gomasio. My favorite way to consume is actually a little bit poured into the palm of my hand and tossed back into my mouth! This is my go-to nighttime snack food.

Basic Soup Starter Recipe
This basic soup starter recipe is adapted from Lynn Rosetto Kasper's cookbook, "The Splendid Table's How to Eat Supper." Lynn says that there are two types of people; those that make their soup stock completely from scratch, and those that buy it in a can or pouch from their local grocery store. Lynn suggests that meeting the two halfway may just be your best bet -- and not that hard, either.
She claims that every flavor-boosting trick they know are in this recipe. There is garlic, aromatic vegetables and verbs, wine and tomatoes.
