Organic Ceylon Cinnamon from Hawaii A Bark that has some Bite

Open the bag, put your schnoz inside and take a big whiff ... "ooh-la-la" to quote Grace Potter. This is what you expect, this is what you want, this is and I mean, IS, cinnamon.

Look at the bag and see a tree, see the bark and wonder how it can be, something like this is so de’lish’iss’ee! Break a little loose, pop-it-in-your-mouth and in a second or two the cinnamon tingles your tongue and the flavor imparts, leaving an eidetic memory.

Freshly cut from a small stand of trees in Hawaii, when it comes in like this, we jump for joy as it reminds us why we chose it in the first place. The man who planted the trees to harvest, chose Ceylon for it’s good health properties, it’s chemical properties and also for its “taste”.

This ceylon cinnamon is grown on a certified organic farm on the Big Island of Hawaii. His trees grow 4-5 years before harvesting (Most trees are harvested after 2-3 years). Not only does waiting increase their yield, but they feel that the cinnamon then has a stronger flavor and has a little more kick to it.

We all know that heat for eating makes you cool in the hot summer days. In other words eat hot food and get the cooling effect as your body makes antifreeze.

Some of the best heat that is easy to add comes in the form of crushed, ground dried peppers. Known as Pimenton (Spain), Piment d’Espelette (Basque, France), Piment Fort (Morocco), Paprika (Hungary) - it's all the same… sort of.

Food history says that the “red pepper” brought from the new world to the continent of the old world, was planted, dried and is used commonly today in the same ways of the old.

Typically using a lower Scolville Scale pepper, these crushed peppers are not considered “hot” and are more aromatic and sweeter than others.

It's the pepper that makes them different from each other, and the process to get them to the final crushed state. Different peppers, grown in their respective countries have different heat (why there is sweet, mild and hot Pimenton from Spain). Spain also smokes their chilis after they dry, typically about 15 days.

Not sure where to use any of these fabulous peppers? Think of topping your eggs in the morning, adding to soup at lunch, and lamb in the evening. Or you can mix it with your favorite wine vinegar to spice up a vinaigrette. You can add it with salt to your popcorn, un-smoked to hot chocolate, and sprinkle your grilled veggies. And speaking of chocolate, add it your favorite mousse recipe!

It’s the perfect spice to heat up your summer to help you cool down, naturally.

While the heat was on here, with the caveat that 90 degrees to Seattle is like a 125 to the Mojave, it seemed like a good time to test some drinks.

Cold water, refreshing, ice water is always better, but alas, earlier in the day all the ice was used for snow cones! Next on the list was a root beer float, but the ice cream just wasn’t refreshing. An Arnold Palmer is always good, but in the heat all I wanted was more ... and the test kitchen (my office in the sun) was way past 90 now.

And then (and finally) cold water (remember no ice available) with a jigger of Elderflower syrup.

And you guessed it, it was the cat’s meow, the duck’s quack, eel’s ankles, elephant’s arches, and even the bee’s knees! It was refreshing, calming and it felt cooling.

If the bottle has anything left in the fall you can bake a cake, or a muffin or two, but in the heat of the summer Elderflower syrup is the cat’s pajamas to twisting any mixed drink!
